Tomato Soup I
Made as is, not great. I attempted to fix it and we ate it but I would only make again with the following changes. 1. Eliminate the heavy cream. Replace with 1/2 C light cream plus 1/2 C skim milk. Not only does it taste better but it eliminates 1500 calories from the recipe. (That is a lot of calories for soup.) 2. Eliminate the sugar. Doesn't need it. 3. Skip the baking soda (I think this might have been the cause of the "odd taste" my family kept commenting about. (I think). 4. Add fresh basil, parsley, ground pepper and salt. A note to novice cooks: Do not add the cold cream/milk directly to the hot soup. Either temper the cream or heat the cream slightly in the microwave and then add. Adding cold cream to hot soup causes the milk to curdle.

Hash Brown and Egg Casserole
My family liked this casserole and it was easy to make but I gave it 3 stars because the clean up just wasn't worth it. I liberally sprayed with Pam but the egg was so baked on to the dish that after soaking the pan overnight and scrubbing repeatedly, I seriously thought about just throwing the baking dish in the garbage. It may sound dumb but for that reason I probably won't make it again. Sausage & cheese omelets with hash browns on the side tastes very similar, is quicker to make, and is much easier to clean up.

Apple Crisp II
We are invited to one of my first extended family "inlaw" parties. Everyone must bring a "fall" dish to share and I'm a little nervous. My husband and dear neighbors have been sampling apple desserts all week. This was the unanimous winner. In fact my neighbor just printed off the recipe to make for her family. It is excellent. Especially the topping. I only made a few changes. I substituted apple cider for the water and cut the white sugar to 3/4 cup because of that. If you like cider it really gives the recipe a little extra zip. Thank you.
