Apple Crisp II
We are invited to one of my first extended family "inlaw" parties. Everyone must bring a "fall" dish to share and I'm a little nervous. My husband and dear neighbors have been sampling apple desserts all week. This was the unanimous winner. In fact my neighbor just printed off the recipe to make for her family. It is excellent. Especially the topping. I only made a few changes. I substituted apple cider for the water and cut the white sugar to 3/4 cup because of that. If you like cider it really gives the recipe a little extra zip. Thank you.

Peach Coffee Cake II
Made recipe exactly as listed. I think next time instead of making a peach layer I will mix the peaches directly into the batter. I'm sorry to say it did not have a lot of flavor but add whip cream and/or ice cream and it was good. FYI: The recipe did not indicate that the finished product required refrigeration. As my husband was cutting a piece the next day he said "did you put blueberries in here too?" Nope - it was mold. You savvy bakers are probably laughing at that and couldn't imagine not knowing to refrigerate. Unfortunately, I didn't know.

Chicken and Mushroom Chowder
The first time I made this chowder I followed the recipe exactly. The second time I made it, I made some changes which I think really improved the final results. I eliminated the water. I didn't see the need for it. I also eliminated the oregano. I think that was my biggest complaint with the recipe as is - for me the taste was overpowering. To add some flavor, I added chicken bullion, white pepper, parsley and onion powder. Lastly, I waited until the final step to add the chicken. Made as is – the chicken cooks too long – the end result is dried out or rubbery chicken. A tip for new cooks: Before transferring the flour/vegetable mix to the rice mixture stir about ¼ to ½ cup of chicken broth into the flour/veg mixture. This helps to eliminate lumps in your final product.
