Beaker's Vegetable Barley Soup

This was really delicious. I omitted the curry and zucchini because I didn't have them. I used dry beans and a home canned quart of tomatoes and did it in a slow cooker on high for 4 hours.

Whole Grain Waffles

Truly magnificent waffles - and you can feel good feeding them to your family. We almost always double it so we can freeze them for mornings we are running late or PBJ sandwiches for my daughter.

Rae's Vegetarian Chili

I used one can garbanzos, and the rest pinto beans because it was what I had on hand. I also omitted the hot sauce cause i did not have it. Husband loved it - I got only one bite before he had it all gone. Definitely a hit!

Penne with Spicy Vodka Tomato Cream Sauce

I did this without sauasage and with 2 T dry parsley and it came out great. It was too spicy for my taste the first night but the second night it had mellowed a little. My husband liked spicy just fine, too.

Fudgy Chocolate Fondue

really excellent - very easy, too. we had a can of evap milk to use up and that was 1/5 cups so we tripled tyhe recipe and poured it over fruit which we will freeze.

Oregano Chicken

I cut this recipe in half and used a 9x( pan - but otherwise followed it to the letter. I served it with rice and a onion/bell pepper mix and it was awesome. Definitely keep the sauce to put on the rice. Delish!! And easy, too. I made the sauce and poured it on the chicken and put the whole thing in the fridge for a few hours so that all I had to do was pop it in the oven half hour before dinner.

Apple, Cranberry, and Pear Crisp

Awesome! I used red delicious apples and bartlett pears but basically stuck to the recie. I used almonds in lieu of walnuts becuase it is what I had on hand. My husband suggested I peel the apples next time, but this was great! Definitely a keeper.

Pasta with Hot Sausage Sauce

Pretty easy and got good reviews from my DH. Too spicy for my two year old. I didn't have capers so omitted them. I also did not use spicy sausage but a milder one. Did not serve with ziti - but still tasted good.

Spicy Black Bean Potato Salad

Oh my gosh!!!! I made this for my hubby (I do not like jalapenos) but I tasted it and it is wonderful. I might make this my new regular. Changfes: homemade cajun seasoning and no bell pepper and 2 c. black beans rather than a 15 oz. can.

Pumpkin Pancakes

I only used the syrup with some other pumpkin waffles. It is good and really doesn't take as long as this says to cook. I popped in the fridge for a couple of minutes and passed on letting it sit for 30 mins. It is great. But it carmelizes and doesn't reheat great so plan to eat it all up that day if possible. I used some of the leftovers as jelly for PBJ's later that day. Not rehated, that worked well, too.

Chicken Enchiladas V

Very good. I was skeptical of the soup - I have had others that used soup and they seemed balnd, but this is a good combination of spicy meat with smooth souuup sauce. This will be our new regular enchiladas. I used turkey and corn tortillas instead of chicken and flour tortillas.

Barbequed Short Ribs

This was great! I used vege buillion on hand so I used that instead of beef buillion. After cooking I threw them on the BBQ for a few minutes. They were a hit!

Black Bean Soft Tacos

We used a pound of dry beans, 4 T taco seasoning mix, 5 cloves garlic and a 7 ounce can of green chiles. Made excellent tacos - rave reviews with husband and kids. We just garnished with regular taco fixings.
