Oregano Chicken

I cut this recipe in half and used a 9x( pan - but otherwise followed it to the letter. I served it with rice and a onion/bell pepper mix and it was awesome. Definitely keep the sauce to put on the rice. Delish!! And easy, too. I made the sauce and poured it on the chicken and put the whole thing in the fridge for a few hours so that all I had to do was pop it in the oven half hour before dinner.

Peanut Butter Muffins

With adjustments based on reading all of the comments - these were very good. I was looking for a PBJ muffin for my kids' lunches. I will try some more just to see about less suagr but these are very good. I used 1.25 cups flour and .75 cups oatmeal instead of 2 cup flour. I used 1 cup of peanut butter. I added 2 T brown sugar and 1 T vanilla with the wet ingredients. I used only one T butter. It made 16 regular sized muffins. I made twleve with jelly in the middle (fill halfway, add jelly, and top off) and I got my kids to eat a jelly they otherwise do not like. The other four I put a banana slice in the middle and a few banana slices on top sprinkled with cinnamon sugar mix.

Karen's Baked Banana Stuffed French Toast

I used a cookie sheet for baking them. I found that this was not enough egg mixture but maybe my bread was bigger than expected. Overall, good food. My husband really liked it, even saying it was necessary to put anything on it.

Good. Served to company and they all liked it too. It does not say whether to include the cinnamon sticks and pods in the broth that you use to cook the rice. I did not but I will try doing do next time to see if it strengthens the flavors. Also, I advise using more than one onion. The onion was the best at soaking up the flavors. The perfect bite had some chicken, some onion and some rice - but there was not really enough onion. Definitely will make again. Nice subtle flavors. Distinct recipe option. Makes me want to try more Saudi Arabian foods.

Baked Macaroni and Cheese with Tomato

I made this adding 1 TBSP Italian seasoning, 1 tsp. onion powder and a scoop of fresh garlic per one of the reviews. It would have been so bland without it. I also only cooked it 30 mins. it was okay. I'll keep looking for that one great comfort food type recipe I hope is out there. Until then I guess I'll stick with mine.

Insane Oven Beef Ribs

Raisin Rice Stuffed Chicken

the rice is a little more bland than expected. But to help, we used the chicken drippings on the rice that was left over. It was really good then.

Broccoli Quiche Muffins

Chop the broccoli up fine - otherwise the chunks are quite big. I wish it had had more egg stuff, but they are okay. I am sure they will get eaten. I also do not like thyme and would omit if I made this again.

Cottage Cheese Salad

Broccoli n Tomato Pasta

Good, fairly easy, but use a big skillet for the tomatoes and garlic - this really gets big. DH doeswn't like warm olives - kids do. I enjoyed it and would consider making it again.

Tomato Barley Soup

Excellent - hearty and easy! I did not follow the recipes exactly but I felt the changes were not significant and I loved this soup. I substituted a 14 oz. can of beef broth for the chicken both because that's what I had on hand. I also did not use canned garbanzos - I cooked them from dry and used that (if you have the time, I definitely recommend). I used 1/3 cup barley and felt I could have gone up to 1/2 cup easily. I sauteed my veges in Pam and omitted zucchini because I didn't have it one hand.

Veggies and Chicken Casserole

Super easy! Had no bell peppers or onions, so I used dried onions and my husband loved it. I also reduced chicken to one breast and did not find it lacking - but then we tend to be light meat eaters.

Butter Bean Veggie Soup

Good and could easily be done with any beans - I will likely try garbanzos next time. I found it took a little longer than 10 mins to get the carrot throughly cooked.

Absolutely Fabulous Portobello Mushroom Tortellini

I liked, my husband really liked. I couldn't find an 8 oz. jar of alfredo, so used the 15 oz. one but increased the wine to 2/3 cup. Pretty good. I did scrape the gills. I did not double the mushrooms. Might do that next time, but that is a lot of the cost, so maybe not. My two little girls (3 yrs. and 19 mos.) did not like the sauce.
