Creole Red Beans and Rice
Wish I had read the reviews before making this. The alarm bells should have been blasting in my head with the amount of salt called for. I have never used Creole seasoning before and didn't realize that the main ingredient in it is salt. A bit spicier than I had hoped but I figure the hubby will still eat. Oh well....

Grandmother's Buttermilk Cornbread
I have made this cornbread several times. It is a no-fail recipe. I do combine things in separate containers but it hasn't been a problem. I use the microwave to melt the butter in a pyrex measuring cup and then add the sugar and eggs to it. I combine the buttermilk and soda in another glass cup and then add it to the butter mixture. I then pour all of that over the dry ingredients. I also melt about a tablespoon of butter in my 9x13 baking dish in the oven and then pour the batter into the hot buttered pan. I like my cornbread a bit crispy and prefer thinner pieces. It is a sweet cornbread, almost like a cake but we all love it.

Mom's Zucchini Bread
My first attempt at this was quite successful. I left out the walnuts because my husband doesn't love them. He generally won't eat zucchini but he'll love this. Easy to follow recipe. I did sub pumpkin pie spice for the cinnamon.
