Vegetable Chowder

I just served this to a crowd the other night, and what a huge hit it was! There were several requests for the recipe. It was super easy, and I only made a couple of small changes--used cream instead of milk (although it was so rich, I probably could have stuck with milk)and reduced the cheese to two cups (it was still incredibly cheesy). Oh, yes, and I also added mushrooms. I know I'll use this recipe many times.

Peanut Butter Frosting

A lovely frosting. I used this on "Lisa's Chocolate Chip Chocolate Cake" from this site (using 1/2 peanut butter chips and 1/2 chocolate chips in the batter). My daughter requested this for her graduation party, and it won raves. The frosting was the perfect combination of peanut butter and sweetness, and I did not find it greasy at all. I didn't use all the cream called for, but that was personal preference. A great find--thanks!

California Sherry Chicken

Just made this last night--what a simple, deliciously elegant recipe! I used mushrooms instead of carrots, and cut up the chicken breast into strips, but other than that, I didn't change a thing. While the chicken simmered, I sauteed the vegetables and cooked some long grain and wild rice--everything was done at exactly the same time. The sauce reduced nicely and was just the right consistency. Thanks so much for a wonderful recipe.

Easy Paella

Just got back from a school trip to Spain, and the kids, teachers, and I (parent) had a "reunion party." Great recipe, but I made some changes for preference and availability: nobody wanted shrimp, so I omitted it; could not find saffron at my local market, so I used saffron rice. Overall, it got raves from the kids & teachers at my Spanish dinner/tapas party, although some thought a bit too hot (pepper flakes). Many asked for the recipe, and my husband loved the leftovers. A keeper--thanks.

T's Easy Chicken

A delightful dish--and so easy!! I made just a couple of changes: cut the chicken breasts in thirds; added about a teaspoon of minced garlic and a few shakes of Italian seasoning; used sort of a stir-fry technique to cook. At the end, I sprinkled the whole thing with generous portions of mozzarella and romano and shoved the skillet in a hot oven for a few minutes to melt the cheese and cook the chicken a bit more. It was tender and delicious--a dish I will make often. Thumbs up from the boys--thanks so much.

Chicken Fried Chicken

This was quite good, although I had no potato flakes, so I had to omit them. And I think I should have crushed the saltines into a finer crumb, because they didn't mix into the spice/flour mixture enough. But the taste was marvelous; I served it with cream gravy from another recipe on this site. Thanks for the post--I've always wanted to try making this dish.

Slow Cooker Stuffing

I think I will always make my stuffing in the crock pot from now on--the method was wonderful. I varied the recipe somewhat, however, by using seasoned stuffing cubes (white and cornbread). I used the poultry seasoning, but did not add the extra herbs since the bread was already seasoned. I omitted the mushrooms, and did not add eggs. I also added some cubes of homemade pumpkin bread about 2 hours before I served it. This was a different touch. I guess I'm rating the method more than the recipe itself, since I made so many changes, but the method is foolproof!! Thanks so much!

Tomato Bisque II

I had always wanted to try making homemade tomato soup/bisque...this is very tasty, thick, and rich. I made a few changes, based on another recipe I'd read--I simmered chopped celery and onion with the tomatoes (I used canned tomatoes)and the herbs. Then I pureed all with an immersion blender. Also, I used brown sugar instead of white. This recipe makes quite a lot of soup--I had scaled it to 10 in order to serve 15, and I had about twice as much as I needed. But it's great the next day. Thanks!

Quick and Easy Alfredo Sauce

Whenever I'm too tired make dinner, my teenaged daughter offers to make this recipe; it's wonderful every time. One addition: try adding a pinch of nutmeg--it makes an amazing difference.

Baked Oatmeal II

This was very different--after looking at the finished product very suspiciously, we tried it, and decided we liked it. I suggested pouring some milk over it, but nobody in the family wanted to do that, so we actually had it with butter and maple syrup, with bacon on the side.

Texas Sheet Cake V

I made this for a family gathering this weekend--a total hit! I made one change, which I got from another posted recipe. Instead of one cup of water, I added one cup of coffee. A great cake--easy, quick, and delicious. I started making it at 11:00, and was out the door with it frosted and wrapped at noon. I love the fact that you don't have to wait for it to cool before you frost it. How convenient! Thanks for posting!

Beefy Baked Ravioli

Hey, this was really good! I tweaked it a bit by layering a few slices of pepperoni over the bottom layer of ravioli; I seasoned the meat sauce with a few shakes of Italian seasoning and garlic pepper; and I added mushrooms to the sauce. Everyone loved it--and it was an easy weeknight dinner with Caesar salad and italian bread. Thanks so much.

Chocolate Ganache Icing

A great recipe--I did not use the brandy, and it was wonderful. I used semi sweet chocolate chips, as that's all I had on hand. Used it to drizzle on top of Chocolate Pound Cake III from this site (unbelievable!), and served some in a separate bowl for ice cream topping. An amazing addition to an already amazing cake.
