Cod with Lemon, Garlic, and Chives

This was a super easy dinner to make, and no dish to clean made it a hit with me! I cooked this on the grill in the packets so I didn't even heat up the house. They took less time to grill. Plan on 12 to 18 minutes of cooking time, depending on the thickness of your cod. I love cod for its mild, delicate flavor. I was not a huge fan of the garlic in this recipe or I would have given it 5 stars. Otherwise, a great dinner! Thanks!

Mango-licious Tilapia

Did not like at all. Orange zest on the fish tasted awful. Fish was bland unless you eat with the salsa. Did not like the avocado in salsa - made it too mushy. The salsa was fresh but seemed to be missing something. Too much onion. I would make the salsa again, with some changes, but not the fish. I would add cucumber to salsa, delete the avocado and add more lime and some sweetener like brown sugar. The tomatoes were a toss up. They didn't seem to add anything other than color to the dish.

(Gluten Free) Magic Cookie Bars

Wow! Amazing! Dessert can be delicious without the gluten! I subbed 1/2 the peanut butter with almond butter for the cookie and cooked it 13 minutes instead of 8. I also used 1/2 brown sugar and 1/2 white sugar. Because several others had mentioned it was sticky, I spread butter in the bottom of my stoneware jelly pan and no problems. This was my first try at gluten free and it was a success! I made these for a friend who is gluten free, but my son ended up eating half of them! Thank you, Jewel! I will make these again!

Homemade Fresh Pumpkin Pie

Love this yummy, easy recipe! I followed some reviewers' advice and added 3/4 cup more pumpkin and extra spices (a little Allspice, doubled the cinnamon). The result was two very full, very yummy pumpkin pies. Thank you all!

Grilled Squash with Piquant Sauce

Five stars for the grilled squash. We loved it, without the sauce. The sauce is not great. I decided to switch the amounts of yogurt and mayonnaise and it was much better. Did not add taco sauce but added Asian chili sauce. Very light and tangy. We put it on grilled chicken marinated in a yogurt & lemon sauce. Very good.

Flourless Chocolate Brownies

I have made these brownies several times and love them! No one in my family is gluten free, but we still devour these brownies as quickly as I make them. I would definitely recommend changing almond flour to almond butter. It makes a huge difference in the texture. I also subbed the rice flour for gluten free baking flour and found that also helped with texture. I have also tried one cook's suggestion to only use 2 TBSP butter and 1/4 cup canola oil. That was an amazing brownie, especially when I melted chocolate chips all over the top. I have found the bittersweet chocolate chips a little overwhelming, so I use half bittersweet and half semi-sweet. Thanks for sharing this incredible recipe!

Roast Sticky Chicken-Rotisserie Style

True rotisserie chicken taste! I chose to use pieces, as another cook suggested. I marinated them overnight and cooked them covered with foil for 1 hour at 300, then uncovered for 30 minutes. They were a feast for the nose and eyes! I attempted to make gravy and for the first time ever I was successful! It was so incredibly easy and I didn't have to season it or anything. We served it with mashed potatoes and asparagus. Really, really good. I have to agree with another comment that I think its the cooking method, not the seasonings that make all the difference. My husband has already asked me to make it again! Thanks for the amazing recipe!

Morning Glory Muffins I

Hearty, healthy and delicious! These muffins are great for breakfast, but even better for a quick afternoon snack. I did make them healthier than the original recipe using some suggestions from other cooks. I replaced half of the flour with Whole wheat, substituted 1/2 cup brown sugar and 1/2 cup honey for white sugar and substituted plain yogurt for the oil. I agree that the muffins were very sticky when they were warm but didn't stick to the paper at all after completely cooled. I will make these again, probably subbing more white flour with oats or flax meal. Thank you for these fantastic muffins!

White Texas Sheet Cake

First, this cake is yellow, not white. This cake was also flat, gummy, and not edible. I followed this cake recipe exactly as written. The batter was very running, but after reading the reviews, I wasn't concerned. I put it in a 15 X 10 as specified. After 20 minutes of baking, the cake tested done and the edges were browned. After cooling for 20 minutes I cut into it and it was as many reviewers have said - the cake was wet, gummy and flat. Very disappointed. I have used many cake recipes from the All Recipes sight and never had a problem with a 5 rated recipe before. I will not be making this one again.

Tomato Sauce

Yummmm! I don't think I can go back to jar sauce after making this delicious tomato sauce. I made it twice in one week. I did cut down on the amount of tomatoes by half(because that was all I had) and cut down on the pepper as others recommended. I also left out the chili powder just because we don't like it. I added a tsp of dried basil. The tomatoes were very acidic so I added a little extra sugar and 1 tsp baking soda and cooked for 2 hours instead of 1. The sauce was thick and oh-so-yummy! Will be making this again and again!

Gramma Momo's WW Pancakes

I was surprised at how good these tasted! The grainy texture might throw some people off who are used to white flour pancakes, but the taste is so yummy! My kids loved them and so did I! I decided to take some reviewers suggestions. I added an additional 1/2 tsp of baking powder and cut the sugar down to 1/4 cup. The pancakes rose well and had a wonderful sweetness to them. If I had had applesauce I would have used it as suggested, but I didn't so I added 3 tablespoons plain greek yogurt and 3 tablespoons vegetable oil. I just couldn't stand the thought of pouring 1/2 cup of oil into my pancakes. They turned out wonderful. I think I'll add 2 tsp cinnamon next time when I make these again with the applesauce. Thanks for sharing this fantastic recipe!

Skillet Meatloaf

This recipe had some great innovative ideas but the final product was not what I was hoping for in a meatloaf. Loved cooking it in the pan vs. oven, but as one reviewer stated, the recipe needed more liquid in the sauce for pan simmering. I ended up adding water and still had very thick sauce. The tomato soup was just too strong a flavor and the meatloaf had no flavor of its own. Very bland. This might be a good starter recipe, but not a great one on its own.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Although I love that these are healthy, they are a little bland. I had to add a little sugar, bananas, or blueberries to get my kids to say "Yum". Subbing applesauce for some of the oil also works. I would definitely change the soda for baking powder, having made them both ways. But beware! Using whole wheat flour (as my husband did) instead of whole wheat pastry flour makes them very flat and heavy.

Mom's Zucchini Bread

This is a good, basic Zucchini bread recipe. I made it into a bundt cake and it was wonderful. It is moist and delicious in its original form. I gave it a four star and not five because I save five stars for those "WOW" recipes. The proportions here are perfect, which makes it easy to change and still get wonderful results. If you are looking for a recipe as a "starter" but love to change things up, this recipe is a great one.

Whole Grain Waffles

Did not have flax meal, so added additional wheat germ. Yummy just the same. I thought these would be heavy, but they weren't. We ate with homemade strawberry compote and homemade blueberry compote.
