Beautiful! Makes a lot. A little too sweet for my taste. And sorry, but it does weep. Still I would make again, but without as much sugar. Thanks for the great recipe!

My Fly Stir-Fry

Fantastic! I did make a few changes. Since I didn't have the mirin, I substituted a splash of a slightly dry, tart Reisling wine. I added an additional garlic clove, 1 teaspoon of sugar, and another tablespoon of ginger. I also added more vegetables - red cabbage, snow peas, and carrots, and some raw peanuts. Very fresh and not overly sweet or salty. I made plenty to have left overs but my kids had third helpings and polished off the entire entree.

Mango-licious Tilapia

Did not like at all. Orange zest on the fish tasted awful. Fish was bland unless you eat with the salsa. Did not like the avocado in salsa - made it too mushy. The salsa was fresh but seemed to be missing something. Too much onion. I would make the salsa again, with some changes, but not the fish. I would add cucumber to salsa, delete the avocado and add more lime and some sweetener like brown sugar. The tomatoes were a toss up. They didn't seem to add anything other than color to the dish.

To Die For Blueberry Muffins

I'm rating these muffins as my husband and kids would have rated them. I thought they were good, but not "the best ever", as my son said. My husband has asked for a "repeat tasting". So, I'll be making these muffins again! I doubled the recipe, used 1/2 cup brown sugar and 1/4 cup white, as one reviewer suggested. I used frozen blueberries which weren't quite thawed. That caused the batter to become very clumpy and grainy. Next time I will thaw more and cover berries with flour as another viewer suggested. Thanks for the recipe and the suggestions!

Key Lime Pie VII

Made this pie three times. Sooooo very easy and yummy. Put it into a graham cracker crust. Once I used a meringue, but its so good by itself I don't think I'll bother doing that again. Definitely a keeper.

Whole Grain Waffles

Did not have flax meal, so added additional wheat germ. Yummy just the same. I thought these would be heavy, but they weren't. We ate with homemade strawberry compote and homemade blueberry compote.

Grilled Marinated Swordfish

These were fantastic! And really, really easy. Because of our hectic schedule I had to let them sit for 2 1/2 hours in the marinade, but it wasn't too strong of a taste. My kids loved it, and so did all the adults! Will make this again! Thank you!

Ok - I didn't use the curry, but only because my family doesn't like curry. I did everything else as written, and the result was amazing! My kids went back for more until it was gone. Great flavor!

Rubbed and Grilled Pork Loin

This was really good. I do agree with another review that you really need to watch the meet and determine time and cooking temp based on your grill. This was a great way to cook pork without heating up the house. Rub was good. Wish I had let it marinate longer. The only reason I didn't rate it a 5 is that my family does not like so much garlic. Will cut down on that next time.

Fruit Pizza II

Simple, beautiful and definitely yummy! I made this for my daughter's birthday and it was a hit. Would make this recipe again. Unfortunately, I took the advice of someone who said to put it in the freezer before transporting. The result was a very hard cookie - even after sitting out for an hour. We couldn't cut it for over two hours! I will not do that again.

Mom's Zucchini Bread

This is a good, basic Zucchini bread recipe. I made it into a bundt cake and it was wonderful. It is moist and delicious in its original form. I gave it a four star and not five because I save five stars for those "WOW" recipes. The proportions here are perfect, which makes it easy to change and still get wonderful results. If you are looking for a recipe as a "starter" but love to change things up, this recipe is a great one.

Wheat Germ Whole-Wheat Buttermilk Pancakes

Although I love that these are healthy, they are a little bland. I had to add a little sugar, bananas, or blueberries to get my kids to say "Yum". Subbing applesauce for some of the oil also works. I would definitely change the soda for baking powder, having made them both ways. But beware! Using whole wheat flour (as my husband did) instead of whole wheat pastry flour makes them very flat and heavy.

Slow Cooker Carnitas

This meat is amazing! My family loves it on torillas right out of the crock pot. I use the leftovers with barbeque sauce on buns and in tamales. I've made this recipe about 10 times and my kids always rave about it. I double the seasoning, and delete the cinnamon, like others recommended. (Mexican cinnamon is much milder than the kind we have in our stores) I don't always braise the meat, only if I have time and want to put it on tortillas. Otherwise, I just throw it all in the crock pot and let it work its magic. This meat smells wonderful while it is cooking. If you are looking for a versatile and easy recipe for pork - try this one. You won't be sorry. Oh - and I did try putting the meat into the oven to give it an "authentic" taste, as some have suggested. The meat came out chewy and hard to eat. Why ruin a good thing? Its fantastic right out of the pot. Thanks you for the amazing recipe! PS - if you are making tamales, use the juice for making the masa dough. You will make the best tamales you have ever eaten!
