Grilled Squash with Piquant Sauce

Five stars for the grilled squash. We loved it, without the sauce. The sauce is not great. I decided to switch the amounts of yogurt and mayonnaise and it was much better. Did not add taco sauce but added Asian chili sauce. Very light and tangy. We put it on grilled chicken marinated in a yogurt & lemon sauce. Very good.

Gramma Momo's WW Pancakes

I was surprised at how good these tasted! The grainy texture might throw some people off who are used to white flour pancakes, but the taste is so yummy! My kids loved them and so did I! I decided to take some reviewers suggestions. I added an additional 1/2 tsp of baking powder and cut the sugar down to 1/4 cup. The pancakes rose well and had a wonderful sweetness to them. If I had had applesauce I would have used it as suggested, but I didn't so I added 3 tablespoons plain greek yogurt and 3 tablespoons vegetable oil. I just couldn't stand the thought of pouring 1/2 cup of oil into my pancakes. They turned out wonderful. I think I'll add 2 tsp cinnamon next time when I make these again with the applesauce. Thanks for sharing this fantastic recipe!

Coconut Pound Cake

Scrumptious! I made this for my mom's birthday and everyone raved about it! The pound cake was moist and just the right density. The crisp outside was a wonderful surprise. Awesome recipe! Every year my mom requests a coconut cake for her birthday. Usually I make some kind of layered coconut cake with frosting. This year I wanted something different so I tried this recipe. I'm so glad I did! We are going to make this again and again and again! Thanks to all the reviewers who suggested adding a little more coconut extract. We love coconut so I doubled the amount in the cake and in the glaze. Then I toasted some coconut and sprinkled it on top when the glaze was still warm. I left it overnight and served it the next day since many said it was better the next day. I also put the coconut into the food processor before adding it to the cake and I substituted buttermilk for the milk because we love our pound cakes heavy. YUM! I'm looking forward to tying different things with this recipe - like adding pineapple.

Strawberry Muffins

Want a real rating for this recipe - unchanged? Here it is. Blah. Not bad, blah, just ok blah. These muffins are just OK as is. I made another batch added a tablespoon of lemon juice, another 1/2 cup strawberries (to total 1 1/2 cups) and 3/4 tsp cinnamon. Much better. I would have rated them a 4. Then I took the advice of several reviewers and changed the flour to 1 1/4 wheat flour and 1/2 cup white flour, changed the canola oil to Greek yogurt, added 1/2 tsp cinnamon, and changed the sugar to 1/4 cup brown sugar. The muffins were heavier, denser, drier, and not very tasty. My kids said the best part of the muffin was the top that I had sprinkled with chunky sugar. They also stuck to the muffin wrapper. Not much of an improvement from the original recipe in taste. Rate those a 3 also. I think I'll move on to another strawberry muffin recipe that will yield a better tasting muffin.

Skillet Meatloaf

This recipe had some great innovative ideas but the final product was not what I was hoping for in a meatloaf. Loved cooking it in the pan vs. oven, but as one reviewer stated, the recipe needed more liquid in the sauce for pan simmering. I ended up adding water and still had very thick sauce. The tomato soup was just too strong a flavor and the meatloaf had no flavor of its own. Very bland. This might be a good starter recipe, but not a great one on its own.

Cod with Lemon, Garlic, and Chives

This was a super easy dinner to make, and no dish to clean made it a hit with me! I cooked this on the grill in the packets so I didn't even heat up the house. They took less time to grill. Plan on 12 to 18 minutes of cooking time, depending on the thickness of your cod. I love cod for its mild, delicate flavor. I was not a huge fan of the garlic in this recipe or I would have given it 5 stars. Otherwise, a great dinner! Thanks!

Fresh Strawberry Sauce

This sauce was very easy and thickened perfectly. I chopped up the fresh strawberries before cooking and decided not to puree because I like the pieces of fruit in it. One problem I had was that the sauce kept overflowing the pan when I left the lid on. I had to take it off for the last 7 minutes. We ate this on waffles and it tasted really good. The only reason I gave this sauce a four (there aren't half stars or I would given it four and a half stars) is that I did not like the tart balsamic vinegar smell while cooking. It really turned me off, even though I love balsamic vinegar. I will make this again but replace the vinegar with lemon juice. Thanks, Chef!

Buttermilk Coleslaw

I used real Mayonaise for this recipe and let it sit overnight. Made as is, this recipe is a little bland for my taste. However, when I added 1 tablespoon vinegar and 1/4 teaspoon salt, it gave it a little more "perk" and my family devoured it. Even my 7 and 11 year olds declared called it "that yummy salad" and asked for seconds. The four stars is for "as is". A good starting point, but not a five star recipe.

Slow Cooker Carnitas

This meat is amazing! My family loves it on torillas right out of the crock pot. I use the leftovers with barbeque sauce on buns and in tamales. I've made this recipe about 10 times and my kids always rave about it. I double the seasoning, and delete the cinnamon, like others recommended. (Mexican cinnamon is much milder than the kind we have in our stores) I don't always braise the meat, only if I have time and want to put it on tortillas. Otherwise, I just throw it all in the crock pot and let it work its magic. This meat smells wonderful while it is cooking. If you are looking for a versatile and easy recipe for pork - try this one. You won't be sorry. Oh - and I did try putting the meat into the oven to give it an "authentic" taste, as some have suggested. The meat came out chewy and hard to eat. Why ruin a good thing? Its fantastic right out of the pot. Thanks you for the amazing recipe! PS - if you are making tamales, use the juice for making the masa dough. You will make the best tamales you have ever eaten!

Wheat Germ Whole-Wheat Buttermilk Pancakes

Although I love that these are healthy, they are a little bland. I had to add a little sugar, bananas, or blueberries to get my kids to say "Yum". Subbing applesauce for some of the oil also works. I would definitely change the soda for baking powder, having made them both ways. But beware! Using whole wheat flour (as my husband did) instead of whole wheat pastry flour makes them very flat and heavy.

Mom's Zucchini Bread

This is a good, basic Zucchini bread recipe. I made it into a bundt cake and it was wonderful. It is moist and delicious in its original form. I gave it a four star and not five because I save five stars for those "WOW" recipes. The proportions here are perfect, which makes it easy to change and still get wonderful results. If you are looking for a recipe as a "starter" but love to change things up, this recipe is a great one.

Fruit Pizza II

Simple, beautiful and definitely yummy! I made this for my daughter's birthday and it was a hit. Would make this recipe again. Unfortunately, I took the advice of someone who said to put it in the freezer before transporting. The result was a very hard cookie - even after sitting out for an hour. We couldn't cut it for over two hours! I will not do that again.

Rubbed and Grilled Pork Loin

This was really good. I do agree with another review that you really need to watch the meet and determine time and cooking temp based on your grill. This was a great way to cook pork without heating up the house. Rub was good. Wish I had let it marinate longer. The only reason I didn't rate it a 5 is that my family does not like so much garlic. Will cut down on that next time.

Grilled Marinated Swordfish

These were fantastic! And really, really easy. Because of our hectic schedule I had to let them sit for 2 1/2 hours in the marinade, but it wasn't too strong of a taste. My kids loved it, and so did all the adults! Will make this again! Thank you!

Whole Grain Waffles

These waffles are a staple in our home. I've been making them at least twice a month for the last year. I don't use whole wheat pastry flour so I use 1/2 cup whole wheat flour and 3/4 cup regular flour. When I don't have applesauce on hand, I substitute plain yogurt. This is our favorite waffle recipe! Thank you for sharing it!
