Italian Confetti Pasta Salad

My husband's favorite. I love this recipe..I add additional black olives and chicken, because the husband likes a heartier lunch. Some say there is too much mayo, but I find that it soaks in by the 2nd day. This couldn't be better.

Slow Cooker Chicken Taco Soup

My husband loved this recipe and it was so easy to make. I just had surgery and I needed some quick slow cooker meals and this one was great. We decided this is our new "chicken chili". Others mentioned the "beer" taste but I didn't notice it. This recipe is very good and I will make it again.

Slow Cooker Chicken and Dumplings

This recipe was okay, nothing special. The Irish Stew dumpling on this site is 500% better. I added garlic, celery, carrots, frozen peas and garlic to this dull recipe for flavor. Additionally, I added 3 cups of chicken broth. If I make this again, I will make Bisquick biscuits instead of canned. The biscuits just didn't taste the same as my favorite drop dumplings. Two cans was too much and they absorbed all of the broth.

Baked Slow Cooker Chicken

I had a hard time grasping how a chicken would brown in a slow cooker. So, I braised my chicken on the gas grill and stuffed it with rosemary and onion along with a garlic and herb rub. I cooked the bird on low for 9 hours and it came out wonderful.

Easy Scalloped Potatoes

I should have read the reviews first. This recipe was blah. I ended up making a cheese sauce and adding it while I was cooking it. It's been in the oven for 2 hours and it's still not done. Never again!

Classic Spanish Sangria

What a way to start a party...I served this at Thanksgiving and it was a hit. The first sip is very strong, but after a couple of swigs, it's outstanding. I even had the men drinking this and enjoying it...It was definitely a crowd pleaser...Serving it over ice cuts down on the rum taste.

This stuffing was too mushy and visually unappealing. I reduced the broth and left the lid off the crock-pot as others had suggested. Will stick to the making stuffing in the oven...

Roast Chicken with Rosemary

This recipe is great! I added a olive oil garlic/ herb rub under and on top of the skin. This chicken is so tender and flavorful...My husband loves this and even eats the roasted rosemary...

Manicotti Alla Romana

Excellent! This dish is better than most restaurant pastas, and once you make this it will become the most requested dish in your kitchen. This has become my signature dish for dinner parties with friends, and our ritual Christmas Eve dish for family. My DH cannot get enough. I always add more garlic and cheese than the recipe calls for ~ fresh spices from the garden are the added touch. I would recommend layering in the red sauce first and the white last. Also, I added some provolone cheese and mushrooms to the meat/spinach mixture. Superb!! Probably one of the best pasta recipes I have ever tried.

Chicken and Dumplings II

Excellent recipe. This recipe produced the best chicken stock I had ever tasted...My boyfriend had 4 helpings the first night. I made the following changes: added garlic and a cap full of Mrs. Dash for some extra flavor, omitted the tomatoes/green peppers, added frozen peas right before I put the dumplings in and I cooked the dumplings for 5 minutes covered and 5 minutes uncovered.

Cream of Chicken with Wild Rice Soup

My husband and I loved this soup. I tweaked the recipe and made it in a slow cooker. I used olive oil instead of vegetable oil and sauted the veggies (added carrots for color) in garlic with fresh herbs from my garden. The rice was increased to 21/2 cups for a heartier soup and I substituted the water with chicken broth (3 extra cups were needed for the slow cooker). Will make this one again....
