Absolutely Fabulous Greek/House Dressing
I love vinegar based dressings, especially red wine. I did not have basil or onion powder on hand. I left out the basil and used onion flakes instead of the powder. This recipe is easy to scale down and easy to make. It is great for a greek pasta salad (feta cheese, tomatoes, olives, cucumbers, pasta, and this dressing) or just a regular lettuce salad. This is my favorite dressing now; I always try to have it on hand.

Amy's Spicy Beans and Rice
Delicious and quick! I cut this recipe in half and made some changes using what I had on hand. I added a small can of chopped green chilies, chopped onion, and minced garlic. I used jalapenos from a jar and white rice. I omitted the black olives and green onions because I didn't have them on hand. I drained most of the liquid off the beans, and still had plenty of juices, especially with the undrained chilies. I will make this again very soon!

Pecan Pie V
Pecan Pie V is super easy and delicious! I have never made pecan pie before, and I am not a huge fan of pie, but my fiance loves pecan pie, so I thought I would surprise him. I was surprised when I loved it too!! Seriously, so easy and scrumptious! I took the advice of others and baked it for 10 min. at 350 and then for 50 min. at 300. It turned out beautiful!! So pretty golden brown. I really couldn't be happier with the outcome, taste and look, also with the simplicity. Thank you for the recipe!
