Easy Orange Duck

The breast is overcooked and the fat did not render properly from the skin. Look up Chef John's orange duck recipe. Much, much better. You must score the skin and render the skin in a pan, maybe after that you could put marmalade on it and finish in the oven.

Beets and Greens

Very easy and tasty! I added some garlic and a touch of cider vinegar at the end! I will definitely make this one again! For those of you who complained that the beets were hard to peel here's a little trick. When the beets are done roasting in the oven wrap them in aluminum foil to let them cool. The foil holds in just the right amount of steam. When you open them up put on some rubber gloves and just rub the skin off right over the trashcan. I also leave the gloves on when slicing them up. Keeps your hands from staining red.

Chesapeake Fish Chowder

I actually made a small mistake in the original posting. Be sure to use low sodium chicken broth or the final product will be too salty with the Old Bay!

Very good recipe! I did make the recipe healthier by substituting 1/8 cup olive oil for the 1/4 cup of butter, and I also added 1 teaspoon of dill weed to the Dijon before I spread it on. The whole family loved it!

Roasted Beets with Feta

Very good recipe! I bought some fresh beets at the farmer's market this morning and was looking for something different to do with them! For those of you new to working with fresh beets some pointers. After you take the beets out of the oven let them rest for about 30 minutes. Put on a pair off latex gloves (the kind you wash dishes with) and just rub off the skin over a trashcan. Then using a sharp knife slice them as thinly as possible.

Martha's Vegetable Beef Soup

As some other reviewers suggested I used a pound of ground beef and sauteed with garlic and onion. Used 2 cans of stewed tomatoes and just broke them up with my hands as I was adding them. I used half low sodium beef broth and water for the liquid, and added 1 tsp Italian Seasoning, 1 tsp Crushed Red Pepper flakes, 1/2 tsp. black pepper, & 1 Bay Leaf. I let it simmer for about an hour instead of the 20 mins, but it came out really, really good! A great soup and what a dollar stretcher!

Juicy Roasted Chicken

Best chicken ever! I originally made this recipe exactly as instructed, because I hate reviewers who give less than 5 stars when they change things! I was not disappointed at all. The bird was moist and delicious. The second time I made it I used Emeril's All Natural Chicken Rub, instead of the salt, onion powder, and pepper (since they're in it anyway), also equally awesome! The take away for me is that the margarine and celery are key! The spices you want to use can vary and the bird will still turn out awesome. Thanks for such a wonderful recipe!

Oriental Pork Chops

This was great! The only thing I did differently was to add 1 tablespoon of Siracha chili sauce. I cut the pork chops up into strips and marinaded them in the sauce for 4 hours. Stir fried them up with some chinese vegetables and served over rice! I'll definately be trying this marinade with chicken too!

Blackened Tuna Steaks with Mango Salsa

The thing I love so much about this website is getting ideas and customizing them to fit your needs. I did marinate the tuna for 3 hours, but rather than make mango salsa I purchased it from Giant. I also used a pre-made Cajun blackening spice, but boy did this come out great! I realize it may have been even better with the homemade salsa and rub!
