Cheese Ball I

You were right, this is wonderful!! My family agreed this is much better than any cheese balls you can buy at the store. This went quickly at my Christmas party. I used the finely shredded cheddar (vs. the regular shredded)and found it to be a nice consistency. Thanks for sharing this!!

Cheese Fondue

This tasted wonderful, but I had problems with the texture...it was very stringy and thick. I served it with cubed french bread, leftover Christmas ham that I cubed, Granny Smith apple chuncks, and steamed broccoli. Yummy! Thanks for sharing!

Corned Beef and Cabbage II

Cindy, you were right--we were not disappointed!! This was absolutely delicious. I made this for St. Patrick's Day in the crockpot--I cooked it for 6 hrs on high and then had it on low another hour while waiting for my husband to get home from work. I used small red potatoes instead of 6 large potatoes and added more carrots. I had to drain off some liquid and fat toward the end or it might have overflowed. I will definitely be making this again. Thank you!!

Pineapple Cranberry Chicken

Cod with Italian Crumb Topping

I used 1.5 lbs of cod and doubled the topping--but it was WAY too much topping! The fish was tasty though and my family enjoyed this for something different. Thanks for sharing.

Broccoli and Sausage Cavatelli

I used campanelle pasta since I couldn't find cavatelli, used sweet Italian sausage instead of spicy and used the frozen broccoli crowns. I also omitted the crushed red pepper flakes because my kids can't handle that, but my husband and I added the flakes to our own food. Delicious! A big hit. Thanks!

Caramel Apples

My son totally enjoyed making these with me for Halloween. I followed others' advice and had the apples washed and in the freezer before I melted the caramels in the microwave. So easy and a tasty treat! Thanks!

Cranberry Gelatin Salad

I made this with our Christmas dinner. I used dark cherry gelatin and omitted the pecans. It was not too sweet and a nice change from the fruit salad I usually serve. Everyone enjoyed it. Thanks!

Raspberry Mousse Cheesecake

I don't know what went wrong, but the cheesecake itself was very mushy and seemed to be undercooked. My family and I also thought with the topping it was WAY too sweet. We usually love cheesecake, but this was so sweet we could barely eat it.

Migas II

I have been making something like this for a few years now after having eaten it in Mexico when I lived there. Now my children even love it! An addition I can suggest is to add salsa (any heat you desire)or a green tomatillo salsa to the pan after the eggs have set up. You can also sprinkle shredded cheese (your favorite or a good Manchego)to the top of everything OR serve it as is with a side of black beans and sliced avocado. Makes for a hearty brunch. Delicious!

Grilled Fillets Alfredo Primavera

This was delicious! My husband and kids loved it. I bought the char-grilled fillets by mistake, but they tasted fine in the recipe. Will definitely be making this again. I'm always looking for fish recipes that my children will eat.

Addictive Sweet Potato Burritos

I substituted black beans for the kidney, otherwise kept everything the same. It was delicious!! A big hit with my 1 and 3 yr old and my husband. A nice meatless alternative to our traditional Mexican-style dishes. Thanks for sharing!

Unfortunately, I followed someone's advice and bought 2 deep dish shells...but really it would have filled 2 regular shells. Didn't care for the texture much or the taste...This would be good for someone who doesn't like "traditional" pumpkin pie, which I do...

Cabbage Roll Casserole

Don't know what went wrong..I followed directions exactly but my rice was not cooked at the end and the cabbage was still a little tough. There was so much liquid in my pan that it spilled out onto the bottom of my oven! Needless to say, I have a huge amount leftover and no one wants to eat it.

Grilled Orange-and-Bourbon Salmon

I have been making this recipe ever since it appeared in Cooking Light several years ago. Several dinner guests have said it is the best salmon they've ever tasted. We absolutely love the flavor. I usually buy a large 1.5-2 lb uncut fillet and use that. It is easy to handle and very easy to serve...it is so tender it can be cut into smaller portions after grilling. A must-have recipe!!
