Chai Cupcakes

I modified this recipe a bit, due to the people that said the texture was off on these cupcakes, and mine turned out very nice and not too sweet. I used soy milk and reduced the amount to 1/2C, plus added 1t chai masala spices to the milk-tea, used oat flour instead of white flour, 1/3C fat free plain greek yogurt instead of 1/2C plain yogurt, added an egg in with the wet ingredients and I also added about 1t grated fresh ginger. I also added about 1 1/2 scoops plain pea protein powder, which you can't even taste in the final product, but you can just add some more flour, about 1/3C until cupcake-batter consistency is reached.

Marinated Chicken Breasts

These were so simple to make and really good! I don't have a BBQ so I baked mine in the oven at 425F for 35 minutes. I used regular soy sauce instead of low sodium and they turned out really salty, which is why this is only getting 4 stars... I'll try with either low sodium or diluted regular soy sauce next time...

Butternut Squash Soup

This was really good! Probably the best soup I've ever made! I did make a bit of a change with the cream cheese though: I replaced one of the packages with a can of beans (navy beans) to make it a bit healthier, and it still turned out amazing!

Pesto Tuna Salad with Sun-Dried Tomatoes

Wow, this was SO good!!! I added in about a cup of chickpeas (mashed) into the mix (without changing anything else) and it turned out amazing!! I've already done the recipe twice and will definitely make it again!

Big Soft Ginger Cookies

I made these cookies twice - once exactly as the recipe is written, and I found the cookies to be very bland and lacking in spiciness. So the next time I used fresh ginger instead of dry (about a 1inch piece) and doubled the cinnamon. Still not spicy enough for me, but my boyfriend loves them. I guess next time I'll try a bigger piece of fresh ginger and triple the cinnamon and double the cloves...
