Candy Cane Cookies II

This is my favorite Christmas cookie recipe. Be prepared to spend some time if you want the red and white twisted candy canes. They are very time consuming and take practice. Last years were a joke. This year, they actually look like candy canes. And like everyone else, skip the almond, use peppermint.

Sweet and Sour Chicken I

Loved it and made plenty for my huge family. The one thing that I did different was that I stir fried half an onion, one bell pepper, sugar snap peas and shredded carrots. I added the pineapple at the end and cooked it all together for a few minutes then I dumped the sweet and sour sauce over the veggies. This allowed me to cater to the vegetarians in my family. Also made sure that the sauce was evenly distributed and forced the all the kids to eat the veggies:) For the vegetarians, I used the same batter and coated veggie chicken strips and fried them prior to using the oil for the regular chicken. This is a perfect recipe for a large family and works well for a mixed family of meat-eaters/vegetarians.

Creamy Veggie Potato Stew

Just like other reviews, I doubled the paprika and salt. I also added minced garlic in with the onions. Topped with sharp cheddar and served with sour dough. It was a hit with my family of 6. Even the 5-year-old gobbled it up.

White Chocolate Fudge with Pecans

It is AMAZING. It is more like cheesecake candy. Very sweet, very rich cheesecake candy. Would be really yummy with dried cranberries.

Slow Cooker Cranberry Pork

I used cranberry sauce without berries. Still tasted wonderful but I will be sure to use the whole berry sauce next time. I , like other, rubbed in minced garlic, salt and pepper prior to adding the sauce. Also the cook time can be reduced. I had my slow cooker set for 8 hours. I check on it after about 5 and it was perfect.

Vegan Black Bean Soup

This is now a monthly staple in our home. We have six members in our family. Half are vegetarian and half are not. This is heaven sent as it satisfies everyone and there are plenty of leftovers for dad's lunch. My only modification is that I add a can of green chilies to spice up the flavor a bit. We are not vegan so I top with shredded cheese and sour cream. I also top with tortilla strips. I cut white corn tortillas into thin strips, fry til crispy then season with Lawry's. So simple but so good. They really compliment this wonderful recipe.
