Red Enchilada Sauce

Reviewed: Jun. 7, 2012
I made sure to read the reviews and decided to make it with the tomato paste also. The sauce came out awesome! It was a bit like pasta sauce but with a mild kick. I made it ahead of time and simmered it for a few hours, half by itself and half with shredded chicken in it for extra tenderness. Great sauce!! I loved it and will definately use this one again. I also added a little bit of taco seasoning for just the right amount of spice for me. YUM!!

Restaurant-Style Buffalo Chicken Wings

Reviewed: Aug. 22, 2013
Wonderful hot wings! I made them with Mexican hot sauce, which was all I had, and added a bit of brown sugar for that "sweet and spicy" effect. Perfect! I left them in the refrigerator the full 90 minutes and they were so crispy even after adding the sauce. I did not soak them in the sauce, just drizzled enough to coat, and put the remaining sauce in a side serving dish for whom ever wanted more. Also, I did not have wings so I used drumsticks and they were still awesome. You really can't improve on perfect. This one is going in my recipe box for sure.

Grilled Tri-Tip with Oregon Herb Rub

Reviewed: Sep. 1, 2013
Delicious herb rub. This has to be the best rub I have ever tasted. I made the tri-tip this time around(my husband usually marinades it) and he was impressed with the flavor. He even asked me to keep it in my recipe box. Great blend of herbs and I did not find it to be too salty at all.

Russian Tea Cakes I

Reviewed: Dec. 12, 2013
These were great! I made them exactly as the recipe stated and they turned out yummy. I made holiday cookie bags and these were apart of it. Everyone asked what "the little white balls" were because they tasted so good. I would definately make these again. Very easy and very tasty, Happy Baking!

Baked Teriyaki Chicken

Reviewed: Mar. 31, 2013
What a delicious recipe for chicken! I followed Valerie's Kitchen review without covering it and it came out perfect! I did not have light soy sauce so I used 3/4 cup regular soy sauce and 1/4 cup water. It seemed to be just the right amount of saltiness. Great with rice and veggies. My sister copied the recipe and made it for her family too!

Chef John's Pumpkin Pie

Reviewed: Dec. 12, 2013
Very good recipe. I used fresh pumpkin instead of canned. Good flavor but I will add more spices next time, maybe even double whats in the recipe. I didn't have 5 spice so I just left it out. I love the creamy texture and nope, mine did not crack! Coulndn't believe I was lucky enough to bake a pumpkin pie without a crack! Thank you Chef John!!

Buttermilk Strawberry Shortcake

Reviewed: Aug. 1, 2013
Wonderful!! I did not have buttermilk on hand so I substituted. I did 3 TBS vinegar with milk added to equal 1 cup, let sit 10 min. and voila!, buttermilk.(I use this sub. for anytime I have no buttermilk on hand) They came out so tasty, my in-laws loved them after dinner. I did not alter the ingredients but made my own whipped cream to top with. SO GOOD!

Pull-Apart Easter Blossom Bread

Reviewed: Jun. 12, 2014
This was really delicious and easy to make. It came out looking beautiful, family could not believe I made it. I was not crazy about the tangy glaze so next time I will just use milk instead. This is one of the best breads I have made, definitely a keeper. I also added chopped walnuts on top for added pizazz!

Chef John's Twice-Baked Potatoes

Reviewed: Jun. 19, 2014
YUM! These were so creamy for only using a fork to mix. I usually use a potato masher. I decided to spray the potatoes with Pam spray instead of using oil. I always use oil, can't say why I went with Pam. Came out perfect! And no greasy hands to wash. So simple and easy to put together. I love the flavor that the green onions give these potatoes. Oh so good and pretty. Sorry Chef John, but I am going to follow this recipe exactly, why mess with a great thing? But I might add bacon next time, bacon makes everything better! Thanks Chef John!

Brown Sugar Meatloaf

Reviewed: Oct. 11, 2013
What a delicious and moist meatloaf! Very good flavor, and the brown sugar/ketchup "topping" added the perfect flavor. Everyone loved it, my mother-in-law asked for the recipe to make it herself. I used only 1/2C milk and put the brown sugar/ketchup on top, where it definitely belonged. Not on the bottom. My favorite meatloaf recipe for sure!!

Smoky Grilled Pork Chops

Reviewed: Sep. 16, 2013
Very good. I love the combination of flavors mixed with the smoky taste. So yummy! Very easy to make and scale to the amount of people to serve. Mine came out a bit dry, but I think because I overcooked them a bit, whoops. Definitely will keep for future use!

Italian Spaghetti Sauce with Meatballs

Reviewed: Dec. 11, 2014
This has to be the best spaghetti and meatball recipe I have ever made! So easy and so delicious. I must have read the recipe wrong and added the meatballs in the beginning when assembling the sauce. The meatballs ended up simmering for almost two hours in the sauce and I'll tell you they weren't any worse for it! So good! Don't know if thats what made them taste so good but I'll definately do it again. My new spaghetti recipe!

J.P.'s Big Daddy Biscuits

Reviewed: Sep. 17, 2013
Woah, these are the best! I can't say how many times I have made these. I received the recipe from my sister who found it in the Allrecipes cookbook. My father-in-law says that they are the best he has ever had. Maybe it's just me, but I always have to add like an extra cup of flour when I make them, otherwise they are too doughy to handle at all. Doesn't matter because they still come out fluffy and sky high. My mother-in-law asked how I got they to rise so much. I haven't made any other biscuits since I found this one. I will put up a picture the next time I make them. By the way, they are great as biscuits and gravy.

Best Steak Marinade in Existence

This was really good as is. I don't have dried garlic so I just use fresh in a garlic press. Very subtle flavor without over powering the meat itself. I love this recipe and have made it several times, thanks for sharing!

Iced Pumpkin Cookies

Reviewed: Oct. 8, 2013
These are pure perfect pumpkin cookies. They are so fluffy and tasty. I've not had pumpkin cookies this good. I added raisins and it's like pumpkin bread in bite size form. My husband suggested adding "drunk raisins" next time instead of plain ones by soaking them in rum. Sounds delicious to me!

DELICIOUS! They don't come any better than this. Fluffy and almost cake like. Great pumpkin flavor blended with subtle spices. I did not have any allspice so instead of 1/2tsp allspice I used 1/4tsp nutmeg & 1/4tsp ground cloves. YUM! Why on earth would anyone want to tweek this recipe??

Cinnamon Raisin Bread I

Reviewed: Mar. 26, 2014
This was the best homemade raisin bread I have ever made! So delicious. I made it exactly as stated in the recipe with the exception of adding about a 1Tsp. of cinnamon to the bread batter with the raisins. I love extra cinnamon in my raisin bread. This is a keeper for me. So yummy!!
