Green Grape Salad

This is a definite keeper. I used black seedless grapes and it was great. I've also mixed black and red grapes together and it was just as good. It disappeared in one day. I'll be making it for the holidays as a lighter alternative to pies and cakes.

Apple Pecan Cobbler

I used Gala apples and this was delicious! The only thing I did differently was add a few more pecans because I love them. I'll be making this a regular in my house.

Chicken Enchiladas V

I had been looking for a good chicken enchilada recipe and I've found it. I didn't have any flour tortillas on hand so I used corn tortillas (I cooked them for a few seconds in vegetable oil to soften). I also stretched the sauce a bit (it didn't look like quite enough) with about 1/4 cup of chicken stock and 1/4 cup of additional sour cream and it was perfect. I also used light sour cream and I don't believe it made any difference. I also added a bit of Kosher salt to the filling to perk it up a bit. They tasted just like the ones at my favorite Tex Mex restaurant.

Banana Pudding II

I try to watch my sugar intake so I made this with Splenda (3/4 cup instead the 1/2 cup of white sugar) and it was pretty good. I also topped it with more vanilla wafers.

Better Than Sex Cake II

I took this cake to work for a potluck and people kept complimenting me on it. I just took a container of Cool Whip that way people could choose to have it with or without. It's great both ways. I'll definitely make this again.

Award Winning Soft Chocolate Chip Cookies

These cookies were great! Very soft even after a couple of days. It was hard to just eat one or two. My kids loved them as well. I'm making some more for the holidays.

Baked Salmon II

This was really good. The flavor reminded me of shrimp scampi. I put a slice of lemon on top of each fillet as well as the lemon juice in the marinade. I'll definitely make this again.

Braised Balsamic Chicken

I tried this recipe because I love balsamic vinegar and was looking for a good chicken dish. This was really nice with the right amount of tanginess that wasn't overpowering. Although, I think I'll take the advice of others next time and add a little minced garlic to the onions. I really like the tomato sauce it makes and the spices complemented each other nicely. To me, it was even better the second day.

Norway's Best Pepper Cookies

I liked these cookies. The dough was a bit crumbly after I took it out of the refrigerator, but they baked nicely. I liked the fact they aren't overly sweet. I made them over a week ago and they are still as fresh as day one.

Spicy Bean Salsa

This was great. Nice and tangy and it makes quite a bit. I left out the black-eyes peas, but only because I don't really care for them. It's a nice alternative to traditional salsa.

Slow Cooker Lemon Garlic Chicken II

Very good! I tried it with boneless, skinless chicken breasts and it was too dry for me. I use boneless chicken thighs instead. Smells and tastes great. Easy and simple to prepare. I make it quite often.
