Old-Fashioned Potato Soup

An absolute hit! This is an easy and versatile recipe. We didn't use carrots or the seasonings, but topped it with cheese, bacon crumbles and sour cream.

Whole Wheat Pancakes

These are just wonderful. I like a heartier pancake, so I cut the buttermilk down, otherwise they come out more crepe like. They freeze beautifully between wax paper and then just pop them in the toaster straight from the freezer. They are just as good the second time around. I used wheat bran instead of wheat germ, and that worked great.

Apple Cake V

I added 1 TBSP of cinnamon and accidentally didn't have light brown sugar, so I used dark. Having made it both ways we like the dark better. I do think commercial caramel sauce would work well if you don't want to go to the effort. I might even like that better.

Pasta and Beans

This was very bland. It does need extra spice. Also the beans went mushy, so don't cook them too long. If I were to do it again I definitely would take the advice of some other reviewers and add garlic and seasonings. Also, canned chopped tomatoes with basil, garlic and oregano would be a good substitute for the tomotoes. I wonder if I was supposed to drain the beans. Usually you do, but this recipe doesn't specify.

Classic Bran Muffins

This really is an excellent recipe. I used whole wheat flour and chopped up dried figs and it was fabulous. The kids loved it! When nutrition tastes good you know you have a winner. Update 1-27-05 I use this all the time. I now double the recipe and put the batter into paper muffin liners in the pan and then freeze them. On another day when I don't have time to make a hot breakfast I just pop them back into the muffin tin straight from the freezer and they take all of 5 minutes longer. You can't tell the difference. I also use freshly ground wheat flour and that comes out just as good as ever.
