Grandmother's Oatmeal Cookies

I know this will be redundant with all the other favorable reviews for this recipe, but I gotta' tell you, these are perfect in every way. I'm making a batch of these a week. It's like an addiction, they're that good!

Carrot Cake III

Great carrot cake here but here's the BEST SECRET! On a whim I substituted 3 cups of chopped apples (1/4") for the carrots and ended up w/ THE BEST APPLE CAKE EVER INVENTED!!! Instead of the cream cheese frosting, do this: Melt one stick of butter on medium flame. Add 1 cup brown sugar and 1/2 cup of heavy cream. Stir slightly and bring to a boil. Simmer for ten (10)minutes- DO NOT STIR! Remove from heat and add 2 tsp of vanilla. Stir in and let cool slightly. Pour/drizzle over cake. Almost too good!

Ultimate Lemon Cake

I made this as a surprise for my sister who loves lemon cake. I followed the directions precisely and the cake did everything it was supposed to do. No problem getting it out of the pan. But going by what my sister says, I didn't have any of it, but she said it was too dense. Could be used as a nice lemony boat anchor. (Hey, she said it- not me!)

Creamy Rice Pudding

This is very good, but not great. Let me tell you how to make it outstanding. First off, double the recipe. Now instead of doing the two eggs, use three yolks instead. Use 1/2 & 1/2 instead of milk. After you add the rice to the milk mixture, throw in 3 cinnamon sticks. After pudding is done, let sit for a few hours. It will have set pretty thick. Add about another 1/2 cup of heavy cream warmed w/ about 2 Tbs of sugar. Mix well. Add about 15 marishino cherries halved. Finally, cover with some merangue and bake until light brown. UNBELIEVABLE!

I made this for our Christmas baskets and it was great- rave reviews! I made a couple of changes that I think worked out better; I rolled out the dough to 1/16" and cut into squares. Then I filled w/ the apple and piched into little pockets. At the end I rolled into a cinnamon/sugar mix. YES!!!

Finnish Cookie Sticks

I made these for Christmas. Nice dough- easy to work with. The only complaint was the egg bath was really messy between the sugar and then the almond so use latex gloves and keep plenty of Bounty on hand. Taste was nice- very nice, but wondered if it was worth the effort.

Holiday Peppermint Bark

Great concept but using the Nestle's white chips gave it an odd flavor. I mean, I know in my head what this should taste like and this wasn't it. Next time I'll use a premium brand or vanilla almond bark and see what happens.

Cry Babies II

You know, I was really surprised by the combination of ingredients as opposed to how good these tasted. I read the reviews and they sounded like a winner, but I started making them and said "Oh, is this right? Chocolate chips? Hmmm..." But they turned out great. Almost like mini spice cakes w/ chocolate. The only advice I'd give is: Don't attempt to double-batch them in a standard Kitchen-Aid mixer. (My cup runneth over!)

Caramel Popcorn

OK, guys, you must make this!!! It is unbelievable! I made it last night to give away as part of our Christmas baskets. I had to make a bunch so I quadrupled everything and baked it in a huge disposable roasting pan (it worked great and cleaned up like new!) If we can leave it alone, some people on our list might actually get their share! Thanx!!!

Double Layer Pumpkin Cheesecake

I made this for a men's fellowship dinner this past weekend. Very good! I doubled the recipe (added a little more spice and pumpkin to boot) and made a thick Graham cracker crust in a 10" spring-form pan. I also decided to bake it in a water bath. Took 1 hour 15 min to bake but NICE! At the end, I added some allspice, cinn. and nutmeg to the whipped cream and dusted it w more allspice. Oh boy!

I'm sorry to give this such a low rating but these didn't turn out so well for me. It came out like a thick too-sweet sauce. Now maybe it was me: I could not get the temp all the way up to 250 degrees so after 40 min of constant stirring, (which maybe was another error on my part) I had to quit. I poured it into a greased cake pan and waited for it to harden, which it never did. It ended up in the garbage. Too bad. Please tell me what I did wrong!

A-Number-1 Banana Cake

Since finding this recipe several weeks ago I've made it so many times I can do it in my sleep. It's easy, fast and wonderfully moist and delicious. Everybody loves it and begs me for more...we'll they don't actually beg me, but you get the point. I tried it w/ cream cheese frosting and it's just a little too sweet. Maybe I'll try to invent some kind of banana / chocolate crumble thingie on it but it's great as it is right out of the pan, which is usually about as far as this cake gets around my house!
