Mexican Lasagna

This was a fantastic weeknight dinner. It went together so easily. One thing I'd suggest is to make sure you find a salsa that's low in sugar. Some of the more popular salsas are loaded with sugar and I think that would make it taste weird. I used a black bean and corn salsa and it was awesome.

Hot Bean Dip

I had high hopes for this recipe and was disappointed. It was just OK. I made it for our Super Bowl party and there are leftovers still in my fridge - over half of it is left. People seemed to enjoy the standby classic Rotel cheese dip more.

I was so excited to try this recipe, but am sorry to say we did not enjoy it at all. I followed the recipe exactly and was disappointed. After a bite or two, we ended up ordering pizza. Sorry.

Absolutely Fabulous Greek/House Dressing

I thought this was exceptional. I replaced about a third of the vinegar with lemon juice, just because I like lemony Greek dressing. It was wonderful. Thank you for the great recipe.

Cajun Seafood Pasta

This was a nice dish. My husband really liked it. I used half of the spices, as per other suggestions, and probably could've used all of them as I didn't find it too spicy at all. Then again, I'm from Texas so perhaps my definition of spicy is a little skewed. I will make again.

These were great. Instead of the lemon pepper/Italian seasoning combo, I seasoned with chili powder. I also had problems getting them to crisp. I think I'll try less time in the micro and more time in the oven, like another reviewer. Thanks!

Lentil Soup

This soup is fantastic. The first time I made it, I didn't have any spinach on hand and I passed on the vinegar. Instead, I drizzled a little bit of good, extra virgin olive oil on the top. It was great. After reading the reviews, next time I'll try with a splash of balsamic vinegar. Thanks for a great recipe!

Southern Living magazine's Venison Chili

I have to preface this by saying that I don't like venison. Since we have a freezer full of it, I've tried and tried to use it up for my the sake of my husband's ego. :) That being said, I was able to take more than a few bites of this. It does tame down the venison flavor, but in my opinion, doesn't eliminate it entirely. My husband thought it was "good." Not outstanding, but just good. I thought it was more trouble than it was worth for just a "good" reaction from him. Thanks.

Lazy Day Citrus Southwest Chicken

This was good, but not as citrusy as the recipe claims, in my opinion. I even added extra dried orange peel due to the feedback in other reviews. Maybe I'll try it again with more peel/orange juice.
