Mom's Zucchini Bread

Makes a big batch, which is good because you should tuck the second loaf in the freezer before it disappears like the first one! My batter was more like a dough at first, but the moisture from the zucchini and some determination with the mixer solved that. Try adding some extra zucchini if it is still looking dry, the zucchini can be a bit dry to being with depending on the time of year and where it was grown.

Downeast Maine Pumpkin Bread

The result is tasty, but the process is really messy. Use the largest bowl you've got and hope your mixer has a lower speed than mine. Also, this makes a huge batch so you should either halve the recipe and used the extra 1/2 can of pumpkin for something else, or be prepared to freeze or give as gifts a pretty sizable portion.

German Rye Bread

I agree with some of the other reviewers that the molasses flavour is quite strong, really overpowers anything else. It also makes the bread quite dark, not at all how it appears in the picture. A decent result but not to my liking, I will be trying a different recipe next time.

English Royalty Chocolate Chip Scones

This would have worked out better had I read the reviews before hand, the recipe as stated does not have nearly enough liquid to allow the dry ingredients to come together. Because I was adjusting the amount of liquid so much, the biscuit-style dough ended up being a bit tough. These are almost too sweet, I may also reduce the amount of sugar next time. I will have to make them again because my wife loves them and I may have to hide them if I want any! I used a pastry knife to cut the disk into square pieces, which gives nice browned corners. I have since tried this using 8 tbsp (1/2 cup) each of butter and water (which works if you don't have orange juice handy), cutting into squares as before. This batch turned out much better and made a lot less mess!

Spicy Tuna Fish Cakes

I've fried and baked these and I find baked is easier, about 25 minutes at 350 will do it. I have a generally hard time frying fish cakes without them falling apart a bit. This is a good choice if someone in your family is not a big fish fan, it is the chicken of the sea after all.

Simple White Cake

Definitely simple to make but mine turned out a bit heavy... possibly needs more baking powder or using cake flour in place of all-purpose. I used some lemon glaze on mine, which goes nicely.

Scottish Shortbread I

Simple and very good. As written this make a fairly soft shortbread, for crunchy about double the cooking time is needed. The dough is not at all sticky, so shaping this is much easier than some other shortbread recipes I have tried.

Soft Oatmeal Cookies

Very tasty but I agree with some of the other reviewers... these are very sweet, you could probably use half the sugar called for and still get a very nice cookie, depending on you preference. If you're short on time (which I was), you can cheat a bit and chill these in the freezer for half an hour and the dough will be solid enough to work with.

Scottish Oat Scones

Very, very tasty. Skip the currants if you don't like them, these work well plain or with the dried fruit of your choice. They also freeze pretty well, I've been putting the second disk in the freezer wrapped in plastic. Great with jam!

Blueberry Oat Muffins

I had to add a little extra egg white to get a batter, it was pretty dry initially. Or you could use an extra large egg, rather than the large I had handy. The muffins turned out really well, solid and filling. I made a dozen with blueberries and another dozen with raspberries, I expect any fresh berry would work just as well.
