Company Chicken Marsala

This is a good chicken dish, but the addition of basil, oregano, and tomatoes changed it to be closer to a Saltimbocca sauce than traditional Marsala sauce. The sauce is basic, not nearly enough mushrooms or garlic, and there is just no wow factor to the dish at all.

Ingrid's Rouladen

I've had Rouladen many times (including in Germany) and this wasn't even close in flavor to what it should be. Edible but lacking in so many ways. Also, the recipe instructions are convoluted with no mention of what to do with the mustard (novice cooks will be lost). As well as referring to a flour and water mixture as a "rue" (I think the author meant roux) when in fact it is a slurry, a roux being flour browned in oil or butter. Sorry but this is not a recipe I would suggest to anyone.

Tuna Melts

Made exactly as is and this made a great tuna melt. I think people are having an issue with the recipe because they're assuming that the recipe calls for one small can of tuna (usually 4 or 5 oz. depending on brand) but the recipe actually calls for a 12 oz can. 1 C of mayo for a 12 oz can is pretty much dead on to bind the tuna, onion and cheese. Great recipe!

Breakfast Apples

Sorry but I did not care for this recipe. I don't understand the need for the oil. All it did was give slighly warm raw apple chunks a slick coating. There is also way too much cinnamon for one apple and a 1/2 cup of rice chex.
