Slow Cooker Roast Beef
I used low-sodium soy sauce and I just didn't like that flavor in the broth. I cooked it in the slow cooker on high for about 6 hours, then low for 3 or 4 more hours. Meat was tender and fell apart, but I just wasn't crazy about the soy sauce after taste. Meh.

My Chicken Pho Recipe
It was okay. I had to do a bit of doctoring to make it really taste authentic for me (I've been to Vietnam, eaten a LOT of Vietnamese pho over the years). I used a little less of the ginger and added a bit of sinigang, which is tart seasoning often used in Asian soups.

Baked Ziti I
Very good. Like others, I skipped the onions and did 1/2 ground beef, 1/2 sweet Italian sausage, then as I fried them up, I doctored with salt and pepper, garlic powder, and Italian seasonings. I used Ragu jarred spaghetti. Like others, I also mixed up the sauce with the ziti for more coverage so no need to butter the bottom of the pan. Used low fat sour cream sparingly and that was fine. I actually put a bit too much cheese (WHAT?! Is that possible?) so next time I'll use a bit less of the cheese. I volunteer to help feed the homeless downtown, and this would be an easy, inexpensive dish to feed the hordes with some adjustments in quantity.
