My family enjoyed this a lot. However, I think I am going to tweak it a little bit. Like other contributors, I found that 35-40 minutes was nowhere near enough time. It took a full hour. Therefore next time, I will not pre-bake my pie crust. I also added about another 1/2 cup of coconut. Yummy!

I made this last night. Wonderful! I did tweak it just a little bit. Like other contributers I added one cup of Beef Stock. I also substituted a cup of tomato sauce in place of the tomato juice. Because of the extra fluid, I did drain 50% of each can that I poured into the crock pot, with the exception of the diced tomatoes. We like things a little more mild in our house, so I left out the green chilis. It took about 4 1/2 hours in my crock pot. I served it with a dollop of sour cream, some shredded sharp cheddar cheese and tostitos scoops on the side. It was fabulous. Easy to freeze. A must in anyone's recipe box!

I used the majority of this recipe as a starting off point for my first ever apple pie. I tweaked it a little bit. I combined both Granny Smith and Gala Apples. I also added 1 tsp of cinnamon, 1 tsp of vanilla extract, 1/4 tsp of ground nutmeg & 2 tablespoons of cornstarch to the apples. Like other contributors, I also poured the buttery syrup over the apples instead of over the top. I used a full crust instead of a lattice crust and baked for exactly 1 hour and 20 minutes at 350 degrees. Came out perfect!
