Elbows with Cauliflower and Brussels Sprouts

This was a yummy meat free meal! I added garlic to the onion saute and upped the wine to 1/2 cup. I cooked the vegetables for about 15 minutes. I added just a splash of lemon before adding the cheese. I used half the pasta and that was more than enough for 4 generous portions. I would make this again in a heart beat!

Cajun Crawfish and Shrimp Etouffe

This was delicious. I usually follow the recipe exactly the first time. This time I listened to the reviews and didn't add the cayenne pepper. I wish I had. It wasn't spicy enough, but still had excellent flavor. 15 minutes was plenty of time for my roux.

Baked Ham and Cheese Party Sandwiches

These were the first party apps to go! The layering the meat and cheese over all the buns made preparing this much quicker than individually. It was Easy to cut and serve when the came out of the oven. My only change was onion powder for the dried minced. Will definitely make this again!

Chef John's Corned Beef Hash

The only thing I changed was to use regular medium salsa. It was yummy!! I used red potatoes and left over corned beef from St. Patrick's Day. Great breakfast for dinner. I said it in another review. Chef John really is my go to!

Chef John is starting to become my go to! I used regular white Italian slices, because it was all I had. I was concerned it might get dry in the oven, but it didn't . Amazing the difference baking it does!

Cherry Bomb Chicken

I used leg quarters and left in the brine for 4 1/2hrs before baking at 400 for 45 min. Everything else I followed exactly. Moist and delicious. Left a nice warm heat, not over powering at all! The chili sauce was a nice sweet heat! Would totally make again!

Love Mussels

It was yummy! Used frozen mussels since they were on sale and added a big can of diced tomatoes instead of sauce. I am sure it would be fantastic either way. Wonderful over pasta. The capers added a great lemony bite and are a must try if you are skeptical!

Thanksgiving Leftover Wontons with Cranberry Salsa

Delicious! Made exactly as written. I did do a few in my actifryer and those were delicious also. They are the ones in my picture that don't have the same golden brown. The salsa makes them extra special !!

Chrissy's Sweet 'n' Sour Tomato Salad

Delicious! Since everything was sliced thin, the tomatoes and onions took on the flavor in minutes! Only change was to add a little garlic powder. Perfect quick side dish. Especially if you have extra tomatoes!

Portobello Mushroom Burgers

Delicious! Easy! Was too lazy to go outside and grill. Made under the broiler after a late work day...very satisfied! Served open face with mixed baby greens and broiled onions. Drizzled with extra balsamic before serving.

Pork Chops with Dill Pickle Marinade

Added minced garlic and crushed red pepper flakes. Marinated for 6 hrs. Sprinkled with pepper and adobo before grilling. Moist and delicious. Definitely not over dilly. Did NOT taste like you were eating a pickle as other reviews stated.
