Best Ever Crab Cakes

Reviewed: Mar. 10, 2012
This was my first time making crab cakes, and they were amazing!! I love this recipe! I was nervous that the crab cakes would fall apart when I cooked them, but they didn't! I doubled the recipe, since the can of crab that I bought was 16 ounces. I also substituted panko for the crushed buttery round crackers. I found a recipe, on allrecipes, for a red pepper sauce. I was very pleased with this sauce too. I had a few leftover crab cakes, so I froze them and reheated them two weeks later. They were as good as they were the first time. These crab cakes are easy and delicious. I would make them again.

Maple Salmon

Reviewed: Mar. 10, 2012
Fantastic salmon dish! Very easy and very yummy!! This is a great weekday dish because it's not a complicated recipe. You can be creative with your sides too. I served this with roasted veggies and twice baked potatoes (another Allrecipes recipe). I highly recommend this recipe!

Extra-Easy Spinach Lasagna

Reviewed: Apr. 5, 2012
This recipe was extra easy! The spinach made the dish! Great ingredient! I used Healthy Harvest wheat noodles, and instead of using 6 noodles I used 9. I thought 6 noodles would make it too thin. I also didn't add the 1/4 cup of water. I wasn't sure why this was included in the recipe. Any thoughts? This dish was even better the second night, reheated as leftovers. A side salad is a nice side to this dish. I would make this again!

Honey-Ginger Grilled Salmon

Reviewed: Apr. 6, 2012
I love this salmon recipe. It’s very easy, but very good! Both times I made this recipe; I used it in a salad. The salad was mixed greens, mandarin oranges, Chinese noodles, and Newman’s Own Ginger Dressing. Awesome! The second time I made it, I realized I didn’t have ginger so I used nutmeg. This is one of my favorite salmon recipes!

Pasta with Asparagus

Reviewed: Apr. 10, 2012
Very simple, very tasty pasta recipe! It really did take the 15 minute prep time and the 10 minute cook time. Good recipe for a fast, delicious dinner. I did make some changes to the recipe. I used veggie broth, and not chicken broth. I also used healthy harvest whole wheat rotini, and not angel hair pasta. My favorite change to the recipe was adding some sun-dried tomatoes. Awesome addition! I highly recommend this recipe!

Spaghetti Squash I

Reviewed: Apr. 27, 2012
This was a delicious, easy recipe! I had some squash in my freezer from the summer, so I used it in this recipe. I made a few changes to the recipe. I did not include olives and used a can of diced tomatoes, instead of fresh. I also added asparagus and sliced portabella mushrooms. Awesome! The fresh basil is a must in this recipe! I made breadsticks to accompany the meal, but really didn't need them. The meal is filling! I'm excited for the summer, so I can make this recipe again, with fresh squash!

Quinoa Side Dish

Reviewed: May 6, 2012
Great side dish! I like quinoa, but I usually have it as a base for another meal and never on it's own as a side. It was delicious! I added a diced green pepper. I did not add the lemon juice. I also didn't use fresh herbs, but dried herbs. I feel that it makes more than 4 servings. This is a side dish I will make again!

Baked Salmon with Coconut Crust

Reviewed: Jun. 22, 2012
This is an easy, delicious way to prepare salmon! I made it on the first night of summer because it seemed like a great meal to celebrate summer! Keep checking the salmon, when it's in the oven. I left it in a minute too long and some of the coconut blackened. (It was still yummy, but it didn't look as nice!) I served it with another recipe from allrecipes, pineapple-lime rice. It was a great side dish for this recipe. I will make this dish again and again!

Tofu Parmigiana

Reviewed: Jun. 26, 2012
Great tofu recipe! Like some of the other reviewers mentioned, you might not realize that there's tofu in the recipe! I actually like this recipe better with tofu! I made a few changes. I used panko, instead of bread crumbs, and used less parmesan. I also couldn't find an 8 inch square pan, so I used an 8 by 11 pan. This worked out well because I was able to lay most the tofu slices down in a single layer. The top was browning within 15 minutes, so I didn't put it in the oven for the full 20 minutes. Next time, I think we'll make this with some roasted spaghetti squash. Enjoy this recipe!

Pasta Pizzaz

Reviewed: Jun. 28, 2012
Simple, but good! I planned this meal for a night where I knew there wouldn't be much time for meal prep. Wow! Quick recipe, and it was delicious! I forgot to buy mushrooms, so I didn't add those. The recipe was still very good! I'm looking forward to making it again with mushrooms! I've never added paprika in a pasta dish, but was surprised at how good it was in this dish! One tablespoon seemed like a lot, but it was the prefect amount. Great meal for a night where you don't have a lot of time, but want a good meal!
