Spelt Bread II

I have been trying to find a good spelt flour bread recipe for awhile. This turned out excellent. I used skim milk instead of rice milk and added 5 tablespoons of cracked grains (flax, rye, millet, etc). I used the quick bread cycle and selected light crust on my bread machine. Then I buttered the crust as soon as it was done and put it in an airtight container to soften the crust. It turned out great.

Buttermilk Syrup

I'd like to give this only 4 stars because it was really, really, really sweet if it were not for the fact that it was really good. I would definitely not add as much sugar. Possible even just 1/2 a cup.

Apple-Cranberry Salad

This is really good. I made it for Thanksgiving. I had rave reviews. I put the dressing on the whole salad and regretted it. If it is not eaten with in an hour or so it gets slimey. The flavor was excellent. Also a few previous reviewers mentioned that the dressing was to much and I'd like to say that you have to use balsamic vinegar and stone ground mustard. Balsamic vinegar is milder then other vinegars. That may be why others found the dressing to much.

Tomato Pork Chops II

I actually put it all togther raw and cooked it for 50 minutes. It turned out fantastic! I added some dash on the pork and put the onion right on top of the it. All the juices melded together and it was great. I served it for my brother in law and sister in law. Every last rice was gone. Rave reviews from all. Thnaks!

Gluten-Free Chocolate Cake with Semi-Sweet Chocolate Icing

This cake was excellent. I made it for my sister's birthday and nobody even guessed that it was gluten free. I made 2 round cakes and baked them for 33 minutes. They did sink in the middle though. Not sure if I needed to cook it longer? I put caremal in the middle and on top then frosted it with whip cream. I crunched up a toffee bar and sprinkled it on top and the sides. It was a hit! Moist and dense. Very good!

Steak 'N' Onion Pie

This was pretty good. I used peppers instead of potatoes though. It just seemed like starch over kill. I sauteed the meat, onions and peppers all together and then added the broth. I only let it simmer until it was thick instead of 45 minutes. Again I thought it was over kill. I also used a pie crust under and over it. It turned out great. A little bland. I would use more spices next time.

Sesame Chicken

I used beef and it turned out great. I added the sauce in while I cooked the beef. Did not add more. It was enough sauce for me. Also I added sesame oil to the sauce. Turned out great.

Skillet Corn Bread

I gave this cornbread 4 stars because I liked how it cooked up nice even using whole wheat flour as I did. I would have to caution you all that it is bland. I put a lot of honey on it when I was eating it and it was okay. It was also really greasy. I used butter instead of oil and it ended up more like a "griddle" type of bread. So I would not use this if you need something low fat. But I will have to say that this was a pretty good idea! I would make it again. Thanks!

Potato Soup Mix

This was good, but I had to add more then 1/2 cup of mix to make it like I like it. I ended up adding abour 3/4 cup mix to 1 cup boiling water.

Mushroom Burger Cups

These were really good. I used a regular size muffin pan. It still turned out very good. It hit the spot. Very easy dinner and my 1 year old loved it. I used bell peppers instead of onions because I did not have any onions and it was delicious!

Hot Fudge Frosting

This was a good hot fudge recipe. But I do have to say that this definitely not a fluffy frosting recipe. It is more like an ice cream topping. But very good otherwise.

I added a little bit of milk instead of eggs because I did not have any eggs! It turned out good, but was a little crumbly. Could have been from the milk. I'm not sure. I also used a 9x13 as well like others said.

Best Ever Muffins

These were excellent. I used 1/4 C Maple syrup instead of white sugar. I put 1/2 C of chopped bacon and 1/4 C of shredded cheddar cheese. I added another teaspoon of baking powder because I used Spelt flour instead of white flour. I would make these again. They were very tasty.
