Spelt Bread II

I have been trying to find a good spelt flour bread recipe for awhile. This turned out excellent. I used skim milk instead of rice milk and added 5 tablespoons of cracked grains (flax, rye, millet, etc). I used the quick bread cycle and selected light crust on my bread machine. Then I buttered the crust as soon as it was done and put it in an airtight container to soften the crust. It turned out great.

Beans and Rice

This recipe was pretty good. Nothing fantastic. I used brown rice. I also put red peppers in with the onions and hamburger. It turned out pretty good. Fast and easy.

Grilled Mustard Potato Salad

This was a hit at my family party as well. My husband does not care for mayo or eggs so this was a nice alternative! I will make it again.

Neat Sloppy Joes

This was pretty good. My husband does not care for for the store brands that have a lot of sugar so I did not add as much sugar as it said. It turned out really well.

Ultimate Irresistible Granola

I decreased the cooking time a little so as to make it chewier. It was a little too sweet for my taste. I will decrease the honey a little next time, but over all very good.

Buttery Soft Pretzels

Sweet Dinner Rolls

I used Spelt flour instead of White flour and it turned out a little crumbly, but I believe it was due to my own error. I will add gluten next time I make them with spelt. Other then that very easy and good.

Iowa City Oatmeal Cookies

These were excellent. I did, however change a few things. I used 3/4 cup sucanat in leau of all sugars. I used spelt flour in leau of all flours. I also used Wheat germ instead of "wheat and Barley". They endd up tasting very good!

Amusement Park Cornbread

This recipe was okay. It was defiantly sweet. I started out using 1 and 1/4 cup cornmeal and 1 and 1/2 flour. I used Whole Spelt flour and had to add an extra 1/2 cup of flour. I put them in muffin cups and they got done in about 23 minutes. They weren't to bad. A little to sweet for me.

Creamy Frosting

Even though this took a little longer then some frosting recipes I still liked it. It was a little to sweet though. I microwaved my butter so it was extra soft. It did have to be whipped a long time and I would highly recommend having a standing mixer for this recipe. I halved this recipe to put on wacky cake for a small birthday cake for my husband since it is just us two. We really enjoyed it!
