Grilled Peanut Butter and Banana Sandwich

These are great to make on a cold night when you want a protein-packed easy dinner! I was at a cafe once, and they made theirs with a tortilla! They wrapped it up and fried it on a panini press...for mine, I add some honey to the PB and Banana before frying it up, then sprinkle cinnamon on top. SOOOOOOOOOOOOOOOOOOOO yummy!!!:) I bet you could do a fried Fluffernutter too! (Pb and Fluff)

Curried Coconut Chicken

I made this tonight and OH MY! My son is eating his seconds as I type this. It was soooo good! I did read some of the reviews and made a few minor changes. I sauteed the curry powder (I used yellow--and added some turmeric as well) in the oil for about five minutes, then added the garlic and onion (Which I diced up using my Ninja chopper). I used veg oil but I had coconut oil in the cabinet and think I will use that next time. I used boneless, skinless thighs instead of breasts (hubby and son prefer them over the white meat) and added those to the mix. Simmered as was stated for 7-10 minutes then added light Coconut milk (I'll use regular next time I think), a splash of low-sodium chicken broth that I had in the fridge, and Redpack petite diced tomatoes (drained the juice). I didn't have tomato sauce and saw that some reviewers left it out anyway (I am not a big tomato lover), so I omitted that. As it was simmering, I added a sprinkle of cumin, some more turmeric and some more curry powder because when I tasted it, it was too tomatoey. I only added four tsps of sugar also. I did add a TBSP of cornstarch in the last ten mins just because I wanted it to thicken up a bit faster. Served it over Basmati rice and a side of garlic Naan bread and it was DELICIOUS!!! The chicken thighs were great to use because they literally melted in your mouth. I wanted to go back for seconds but my stomach was full from eating the firsts! :D Will definitely make this again!

Peanut Butter and Banana Dog Biscuits

My dog *husky/malamute mix* LOVES these...BUT I have trouble getting them to get completely hard in the middles..I've baked them at 300 for half an hour, or sometimes longer, but the edges (I use cookie cutters) start to brown too much and if I let them go too long, they start to burn. Anyone have any suggestions??

Pumpkin Chocolate Chip Cookies III

These were sooooooooooooooooo addictively yummy! I seriously cannot stop eating them! I hate the texture of pumpkin pie, but love the smell and taste of it, so these were excellent! I did add a bit of nutmeg and allspice to give it more kick, left out the walnuts (I don't like nuts), and they were delicious:)!

Bow Ties with Sausage, Tomatoes and Cream

Made this tonight! I followed the recipe with just a few changes. I didn't use a whole pound of sausage because it was just myself and my husband and I'm not a sausage lover..also, when I cook, I usually don't measure out the onion or garlic, or spices..just add to taste. Followed others suggestions and used diced tomatoes and half and half. I also added some basil, and I didn't have fresh parsley so I used dried. I added a bit of flour to thicken the sauce a little. It came out really good, although a bit too spicy for me, but good enough for my husband (who doesn't like creamy too often) to go back for seconds!:)

Garlic Chicken

Made this last night but substituted shredded cheddar since my two men (My son and husband) do not like Paremesan:) I liked it a lot but next time will add more garlic because it wasn't garlicky enough for me. :)

Creamy Hot Cocoa

This is the best regular hot cocoa recipe I have found on here! It is great if you have a bit less sugar. I just modify it to my own taste, the first time it was too sweet, so this time I added about 1/3 C sugar because I added some Coffeemate vanilla to it later on! YUMMY! I also add some cinnamon or chili powder (not too much or it will be wayyy too spicy), for a different twist. I wouldn't add the salt, as I see no need for it. It is delicious no matter what you put in it!
