Marinated Pork Tenderloin

This was EXCELLENT! We made it on a Wednesday and put the marinating pork in the freezer. WE left for a camping trip on Thursday morning and grilled the meat on Saturday. A huge hit! I had to triple the recipe because I had 4 lbs of pork to do, but it was perfect! Even the picky eaters cleaned their plates... great recipe; will certainly make it again!

Philly Cheesesteak Sandwich with Garlic Mayo

These sandwiches were excellent! I also buy the pre-cut fajoita meat at my grocery, and it works really well. Seemed like way too much mayo though... I only used about half and could have used less. We used a mix of red and green peppers and a little pepper jack in with the regular. Yummy!

Blue Cheese Beef Roll

It was OK... I'll probably make it again but with some changes. I used Pillsbury Cresecent Rolls (2 tubes) instead of the recipe's dough, and I only baked it for about 10 minutes. Next time, I'll try using the recipe's dough, since the crescents were too hard to work with. As for the recipe itself, very nice. I'd add more blue cheese for flavor and leave out the walnuts... don't feel like they added anything. Also, 2 lbs made almost twics as much filling as I needed! I'm passing the leftovers on to my mom to mkae her own, since I don't want this 2 nights in a row!

Grecian Pork Tenderloin

This recipe was only OK, but it was no one's fault but my own! I only had thick boneless pork chops, and a Foreman Grill to cook them on! We stuck them in the oven for a while to finish cooking, but they got a little dry. The marinade was great though, and like everyone else I could have gotten away with about half the amount for the 1.5 lbs. of chops. Served with garlic and olive oil cousocous for a pleasant meal!

Butterscotch Oatmeal Cookies I

Not bad... I read the reviews and took some of their advice... used 2 eggs and a full cup of shortening... I melted the shortening to make the batter less crumbly... I certainly wouldn't describe these as chewy... very crunchy but really a nice combo of flavors. My boyfriend raved about them and my roommate was eating them for breakfast. (They do, after all, have oatmeal!)

Apple Butter Pork Loin

Not bad... a little dry. I think I overcooked it... I used boneless chops and baked for 20 minutes in the juice, and 45 minutes with the sauce mixture. Not too sweet, nice flavor overall. Not as pretty as I was hoping for; I flipped it so the sauce was down and my boyfriend ate it up!

Mrs. Sigg's Snickerdoodles

Great, classic snickerdoodles, but a couple of minor things... I used a full cup of butter shortning plus 3 T of water instead of half butter and half shortning. Also, I had to add almost a cup of flour to thicken it up a bit. I also found that it got easier to mold into balls after it had sat out for a while to set. But, 10 minutes in the oven made for perfect, wonderful cookies, just like I remember from my childhood...

Fresh Salsa II

You can't go wrong with fresh salsa! We had huge quantites to tomatoes to get rid of, so this used up a bunch! I use salsa as an excuse to clean out my fridge; garlic, corn, cilantro, basil, shallots... all those things I got a lot of in the garden and wanted to use up... I don't have a recipe; I use whatever's on hand.

Ketchup

Fresh ketchup is quite different from the store-bought stuff, but so nice! We used fresh tomatoes from the garden, so this was awesome! It doesn't make much for the effort, so I'll double or even triple the recipe next time... we used it to make the Blackberry BBQ Sauce... very nice! Thanks for sharing!

Blackberry BBQ Sauce

Not bad, not fantastic. The best part about the jelly was telling people that it was in there and seeing their reactions! I used a reduced sugar berry blend jelly, and it was quite good. I also used homemade ketchup, which may or may not have affected final result. I'll probably try it again with store-bought ketchup, just to see the difference. Thanks for sharing!

All Day Apple Butter

Mmmmm! I'm going to make this on a regular basis, just for the smell in my kitchen when I do! I nice flavor; even though I used half the suggested amount of sugar. We used a variety of apples that were lying around; Macintosh, Gala, Granny Smith, Golden Delicious and a couple of unknowns that we had... but it's good no matter what! Kind of a mutt, if you will! Like others have said, you can't cook it too long... also, I used my hand blender in the slow pot after about 6 hours, just because I was getting impatient that it still didn't *look* like apple butter! My first try at apple butter, and certainly something I will make again!

Squash Cookies

Great recipe! We used delicata squash, thanks to a bumper crop of 'em... and they made a very pleasant cookie! Very light and cake-like; we left out the raisins and only used a few pecans, but I'm glad we did; we were going to leave them out entirely, but they add something nice to the texture. Overall, a great recipe, and thanks for sharing!

Zucchini Cobbler

Wow! I've never really had an opinion on zucchini, but this dish is magic! We, like so many others, had huge quantities of zukes, and you can only deal with so much bread! This was amazing! Next time I make it, I'll try the oatmeal in the topping; we also gave it a couple of minutes under the broiler to zap the topping a bit. A great recipe... thanks for sharing!
