About this Cook
My husband and I live on a small hobby farm in north western Pennsylvania. We eat all of the food we grow and raise from chicken and duck eggs, goats and rabbits to various fruit trees, berry shrubs and a large organic garden.
My favorite things to cook
I come from a long line of bakers, my great grandmother owned a bakery at the turn of the century to make money to support herchiildren after her husband died. I am fortunate to still have her recipes and use them to make wonderful Rhubarb pies, custards, cookies and candies.

Coconut Milk Shrimp Soup
This soup was outstanding, although I did make a few modifications. I used diced/cooked butternut squash, eliminated the mushrooms and instead vermicelli I used corn and barley. To make a nice broth I used 4 cups of vegetable broth and I also used about 6 diced green onions and a big bunch of chopped cilantro and two chile peppers for a little extra heat. I only added the shrimp after the soup had simmered because it was already cooked and I didn't want it to get rubbery. It was just the Thai soup recipe I'd been looking for.

Rabbit Stew with Coconut Cream
We're in love with this dish! Just made it tonight (we raise meat rabbits) and it was the best rabbit dish we've made so far. This recipe is a keeper. I added two serrano peppers and it really had a nice kick. The coconut milk made a delicious sauce that we ate over brown rice. I pressure cooked it for 30 minutes and the meat was falling-off-the bones tender.
