LOVE, LOVE, LOVE this recipe! I used some frozen zuchinni that I grew last summer. I drained the liquid off first. I put all of the wet ingredients in a blender. I also chopped the drained zuchinni in the blender too. To make it a "little" more healthy I used 1 1/2 cups of whole wheat white flour and 1 1/2 cups of all purpose flour. I used 1/2 sugar and 1/2 Splenda. I'm thinking I'll use unsweetened applesauce next time and reduce the sugar a bit more. It came out PERFECT. This made 1 regular loaf and 12 mini loads for the freezer. If I don't eat them all first!
