Mom's Baked Macaroni and Cheese

I had to serve 32 children at church, so I read the reviews and decided on 3 16-oz boxes of macaroni, four cans of the soup and four cans of milk. I forgot the shredded cheese, so I just didn't worry about it. It was basically a mildly cheesy white sauce and the children devoured it! It was a huge hit. I will make it for us with some dry mustard and decent shredded cheese. The mild kids' version was pretty good - I snuck a few bites and liked it, but would prefer the forgotten cheese. The kids didn't miss the cheese.

Stephen's Chocolate Chip Cookies

I don't usually like chocolate chip cookies that flatten out, but WOW. These cookies are amazing. I only changed the mix of chips and nuts to match up with what I had in the pantry.

Simple Country Ribs

Wow is this ever an easy and delicious recipe! I can't believe how simple it is and how great the results. I used spare ribs because that's what I had. I couldn't get to the grill, so I threw them in a pan and let them cook awhile, then broiled them with some more sauce over the top. You just have to make these! I only changed things up due to my circumstances that evening, the results will be fantastic no matter what you do!

Spicy Sweet Potato Soup

I loved this soup. It was delicious and easy to make. I followed the directions and thought the blend of flavors was great. I do think I could eat it without the garnishes if I didn't have them on hand - it was that good.

Mushroom and Leek Soup

This was delicious! I had to use kale instead of leeks because that's what I had and it was great. Then towards the end of the pot, I extended it by adding an undrained can of crispy white & yellow corn.

Easy Vegan Peanut Butter Fudge

I made a 1/3 batch and put it in the freezer. I hope it freezes OK! Used Earth Balance for the margarine. It tasted just really good, and I am not a fan of fudge. This is a gift for a cousin. Only 4 stars because the sugar needs to be reduced and you are left on your own, which may intimidate some cooks.

Hot Cranberry Tea

This was a big hit at my cookie exchange last night. I think we would have polished off the whole batch (we were a small group) if only it weren't so sweet. I suggest only 1-1/2 cups of sugar or maybe even just 1 cup and then sweetening as you go. I will cut leftovers with fizzy water as that also sounds like a good idea to cut that cloying sweetness.

Molasses Sugar Cookies

These were great. I did use brown sugar and butter-flavored shortening. I had to use 5T of butter since I ran out of shortening. I forgot to roll them in sugar, though. They look great and taste great.

Easy Sugar Cookies

I made these cookies last night and they were fantastic. The dough was easy to work with and the cookies were a big hit. I sprinkled white sugar over the top. I ate some dough, which tasted great! I did add some almond extract and doubled the vanilla. I think the addition of grated lemon peel would be fantastic.

Cola Pot Roast I

Easy Lemon Cake

I followed the directions to the letter and this cake was not good. I wondered about the lemon gelatin rather than pudding, but I used it. And then the "frosting" was like liquid. There is SO MUCH sugar in this recipe, it is almost in puddles in the bottom of the pan -- the cake is wet from it. Someone tell me what I did wrong!

Guinness® Corned Beef

If you go back to 2003 and read reviews, there is someone who didn't like this recipe because she used Coors Light and then said she didn't think the Coors Light could be the only reason it didn't taste good! That still makes me laugh. I got this recipe 2 years ago and have been making it ever since. We love it. I gave it 4 stars because the recipe says to cover it with brown sugar, but in the crock pot, the sugar always comes off the meat and dissovles into the beer. Is this coating supposed to form a crust? Why not just put brown sugar in the beer? Why get messy with patting the sugar onto the beef or am I missing something? Although I would LOVE an answer, it doesn't matter - my entire family (and yes, we are Irish by heritage, but that makes me laugh as well) loved it.

The Best Chicken Salad Ever

This is a big hit at our house. I like chicken salad with grapes in it -- you can do that to the finished recipe. I also like sliced green olives (but not with grapes!) -- you can do that to this finished recipe. My husband was skeptical but ate it all and then wanted me to make another batch right away!

Honey Roasted Red Potatoes

I really liked this, but I have trouble anytime I roast potatoes. I even leave them in longer than I should and I never get the crispy results others get with yummy roasted potatoes. Help! I'm talking over the last 10 years - I HAVE to be doing something wrong! Even so, these are delicious and the sauce could really be used on any number of meats or vegetables.
