Peruvian Style Beer Can Chicken

Reviewed: Jul. 28, 2012
I tried this with the addition of hickory chips to give it an extra savory flavor. Excellent look and flavor. The skin was crispy and the meat moist.

The family loves this recipe. I use a little less chile paste in defference to my wife but it still pleases everybody.

This was an instant hit at my house. Next time I will let it marinade a couple of hours in the sauce before cooking.

Grilled Salmon II

Reviewed: Aug. 19, 2012
The longer you marinade the salmon the better to emphasize the flavor of the marinade. It is quick on the grill goes too fast when eating. Make extra marinade, put it in a small saucepan and bring to a boil on medium-high heat. Reduce heat until just bubbling. Cook until the sauce thickens adding mixture of 2 tbsp water and 1 tbsp cornstarch if necessary. We absolutely love it with a side of pasta parmesan or wild rice and steamed vegetables.

JD's Chile Paste

Reviewed: Aug. 19, 2012
This chile paste adds spice to any dish. I would rate it about "Medium-Hot" as you definitely taste it but it doesn't punish your palate. Use fewer red chinese peppers to reduce the "heat" or add a tablespoon of honey to make it a little sweeter. It has a nice smokey after taste that makes it ideal for use in meat and poultry marinades and barbeque sauces.
