Pickled Hot Peppers

A very simple and easy recipe. I use it to pickle banana peppers from my garden. I never seem to get enough peppers to do large batches so I scale down this recipe to do one jar at a time and then I refrigerate shortly afterward. Sometimes I will cut up new peppers and put them directly in the previous, already being used, jar and it turns out well. Great flavour overall and I hope to plant more next year just so I can use this recipe again and have more!

Flounder Mediterranean

This was an excellent recipe, enjoyed by my family. I took the recommendations of other posters and cooked the fish separately from the sauce and it worked perfectly. The fish was crisp and the sauce was wonderful! My husband, 11 y/o and I loved it. My 11 y/o daughter normally doesn't like fish that much and she ate seconds of this dish and asked for more. My 9 y/o daughter who DOES like fish DIDN'T like this recipe. I plan on making this again.

Classic Fried Catfish

I fried a couple of fish up exactly as the recipe stated and the fish were only lightly coated and not very flavourful. I instead added an extra step after the first coating...I dipped the fish in beaten egg and then in the batter again. I also added an extra teaspoon of Tony Chachere Creole seasoning to the batter. Between the two extra steps, that did the trick. My girls, 10 & 8, and my husband then enjoyed the fish. However, in my opinion, I cannot wholeheartedly recommend the original recipe. It just did not *wow* my family or I.

Best Burger Ever

I have to admit, I omitted the rolled oats because we didn't have any, but even w/o this ingredient, the flavour of this burger surpassed any burger that I have ever made for my family. My husband said it was tasty and my children, 10 & 8, asked for seconds. Very juicy and very tender even when cooked completely through.

Creamy Rice Pudding

I found this recipe to be easy to make and delicious. However, I was the only person in my family to think so. I will probably make it again for myself anyhow. Great with nutmeg! :o)

Sean's Falafel and Cucumber Sauce

I too blended even the chickpeas/garbanzo beans, and it all turned out great. The falafel taste reminds me of the ones I make out of the box, so it was familiar and tasty! I, as well as both my girls, ages 9 & 7, enjoyed them very much. I didn't make the cucumber sauce, maybe next time, but still a recipe I plan to make again and again!

Portobello Mushroom Chili

Best Ever Jalapeno Poppers

I made these a couple of days ago with some fresh jalapenos that I pulled out of the garden. My breadcrumbs were tortilla crumbs that I found at the grocery store and they worked wonderfully. As others have said, they do take some work, but are well worth the effort. --- I can also vouch for their freezability. I froze them uncooked and then pulled them out again a few days later and dropped them into my FryBaby. I would almost venture to say they were better after being frozen. I will surely make these again, they were just fabulous. I missed the spiciness, but because they were not spicy, my kids ate them and that was a plus.

Broccoli and Cauliflower Casserole

Definatly a keeper! I will be making this again for sure. Kids ate it and I *loved* it. Only hitch, at least when I made it, I had to double the rice because 1/2c uncooked rice doesn't make that much and the whole thing is quite soupy without the extra bulk. Once I added more cooked rice, it was super. I did not use processed cheese (EW! fake cheese!) and I used brown rice. I used all real cheese and the dish was soooooooooo good.

Strawberry Cake II

The cake portion was light and tasty. It really had a nice flavour to it. The frosting had a nice flavour too, but a bit sweet and I had to double the frosting recipe to cover the cake fully. I will probably make the cake again, but I will try the frosting recipe others have been recommending.

Cauliflower Shrimp Salad

For this family, it was neither distasteful, nor outstanding. Everyone ate it, including my husband and 7 & 9 year old girls. I used Marie's Creamy Italian Garlic for the dressing choice. The only switch I made was using chives because I didn't have green onions. The whole dish was a nice change and had some lovely flavours, but I just did not consider it a *WOW* 5 Star kind of dish and will more then likely not be making it again.

Vegan Split Pea Soup I

My view is pretty much the same as all the others. Very yummy, my 7 & 9 y/o's ate it. I took everyone's advice and used 12 cups of water to start with and also added a vegan boullion cube. We topped it off by sprinkling the top with bac'uns (vegan fake bacon bits). In a word: YUM!

Eggplant Parmesan II

Simply wonderful! Only changes I made were: I too sweated the eggplant after first baked, I used homemade breadcrumbs made from Country Seed Bread from the Whole Foods Market, and my choice of spaghetti sauce was Muir Glen's Garden Vegetable. It was very easy to make! My 9-year-old daughter asked for seconds and my oh-so-finicky 7-year-old daughter made sure I put her 'seconds' aside for tomorrow's lunch. They asked me to make it again tomorrow. This is not going to happen, but I will surely give this recipe a place in my family recipe box.

Cherry Cobbler I

I did tweak the recipe slightly. I cut the water down from 1c to 3/4c, used frozen organic raspberries instead of cherries (because my husband does not like cherry cobbler), and I used whole wheat pastry flour to give it some nutritional value. – When I make it again, I will also cut down on the sugar. It is quite sweet. Overall, it was a great recipe: easy to make, firmed up great, not watery, everyone in the family liked it. I plan on making it again and again!

Old Fashioned Peach Cobbler

I picked this recipe because it had a five star rating. My husband is a big peach cobbler fan, and I wanted to really *wow* him. I was not happy with the way this turned out. It was too runny/watery/liquid, the crust reminds me more of a pie, and it was too sweet for my taste.

Greek Style Potatoes

Just made them, still picking at them too. First bite seems super-lemony, every bite after that is just savory and delicious. YUMMY, YUMMY, YUMMY. I don't know how these compare to real Greek cuisine, but they will definitely be made again in this house. OH, and I used 1/2 the water, as recommended in the other reviews.

Carrot Cake III

Easy to make, came out great, 2 thumbs up from the entire family, even my carrot cake hating husband. I made one small change: I substituted the cream cheese for Tofutti Cream Cheese which is a non-dairy cream 'cheese'. Man! It was GOOD!
