Authentic Louisiana Red Beans and Rice

Fantastic Lemon Butter Fillet

I've been forced (by long term bad eating habits) to eat more fish (that isn't a fish stick). This was really, really, really good & I don't like lemony flavor. It just worked. Now I understand why fish & lemon go together, but that's another symptom of overuse of frozen food ;) I think I might use a little less butter next time--or find some way to cut down on fat, but as the recipe reads now its 6 WWPP so its pretty healthy overall. & most importantly: edible for non-foodies who gravitate towards battered fish

Chicken Stir-Fry

We like spicy, so added 1t of red pepper flakes, but next time I'll reduce the brown sugar .. a little too sweet for my taste. Very good and easy for a weeknight meal.

Macaroni and Tomatoes

Overall, this is basically a healthy recipe. I bumped up fiber by using whole wheat pasta. Its cheap, easy and better for you than many other pasta or rice dishes. Win-win!

Oven-Fried Catfish

OMGosh this was SO good!!! I didn't have celery seed so skipped it so I'm not sure exactly what is was supposed to taste like but it was amazing as it was. I might add some cayenne to spice it up next time (tonight) mmmmm, yummy!! Thank you & 5 WWPP points that tastes like fried catfish. Beat that!! Dieters/healthy eaters miss NOTHING!

Garlic Chicken with Orzo Noodles

This is a great recipe as is and modifying it also. I think next time I will add the spinach before the orzo though. And the time after that, I will add some chicken stock, double the pepper flakes & garlic (we like spicy) and steam some broccoli and/or asparagus. Any veggie will do! Thank so much, it's great!

Baked Salmon II

I had to modify the recipe because I didn't have all of the ingredients on hand. I used chives and dried parsley. I think next time I will eliminate the salt and use less olive oil (& maybe garlic?) to lighten it up a little. I am not a fish person and usually the only way I will eat it is grilled, but this was delicious. It was super easy & will be a regular on my dinner menus.

Shrimp Scampi V

I cut the butter in 1/2 and used 1/4 c EVOO to cut down on the fat. I also added green onion with the garlic & shrimp---and, I used whole grain thin spaghetti instead of angel hair. Whenever I can add fiber and cut fat, I try to do it. Spinach, broccoli or any colorful vegetable would probably work well too. It was easy, quick and tasty! I will surely make again.

Overnight Asparagus Mushroom Strata

Made this for a brunch for my in-laws. I chose the recipe carefully based on their dislikes and this one backfired on me! I've never made it before in my life. I know, I know--never try a dish for the first time on others without trying it first. You see, I wasn't trying to impress them. They think I don't cook (well) and I wanted to keep it that way! They are a foodie bunch (own restaurants & catering) and I didn't want to be expected to brings things to family gatherings. Everyone always brings something (there are 9 brothers/sisters & all have reproduced) so I always feel like there is enough food--good food, why should I make/take too? Well..............thanks a lot because this was FANTASTIC & now I'm expected to make & bring it for breakfast/brunch occasions! They LOVED it! I made a double for the large crowd and it still wasn't enough (even though there was tons of other food). My SIL who claims to hate asparagus had seconds telling me how good the "green bean quiche" was. When I told her it was asparagus, she had another bite to be sure then asked for the recipe. My BIL hates mushrooms also loved it totally missing the mushrooms! Don't try this dish if you're trying to make something people won't eat and/or make them think you have no cooking ability. You'll wind up in the same boat I am: stuck making & taking because people love it!! Again, thanks a lot!! ;)

To Die For Blueberry Muffins

Taste was great but I forgot salt because I followed the worded directions & didn't review the ingredients until it was too late. I agree too much butter as I didn't get crumbs like I usually do. And oh yes; what a mess!!! Don't fill to the top even if you forget salt! Again, great taste.

This was incredible!! I didn't have heavy cream and 1/2 and 1/2 seems like a 'lighter' choice anyway, but mmmmmmmm...this was SO good!! So good! I'll be making this again..soon!
