Grecian Pork Tenderloin

Fantastic!! I do not enjoy pork tenderloin as a rule and this I would eat again..enthusiastically. It's really juicy....mmmmmm :)

Shrimp Lemon Pepper Linguini

Really good and easy..which is the way I like it. I've made it twice; once I added fresh spinach after step 2 and another time I used a pesto flavored pasta. Did I mention it is easy?

Shrimp Scampi

I cut the butter in 1/2 and used 1/4 c EVOO to cut down on the fat. I also added green onion with the garlic & shrimp---and, I used whole grain thin spaghetti instead of angel hair. Whenever I can add fiber and cut fat, I try to do it. Spinach, broccoli or any colorful vegetable would probably work well too. It was easy, quick and tasty! I will surely make again.

Baked Salmon II

I had to modify the recipe because I didn't have all of the ingredients on hand. I used chives and dried parsley. I think next time I will eliminate the salt and use less olive oil (& maybe garlic?) to lighten it up a little. I am not a fish person and usually the only way I will eat it is grilled, but this was delicious. It was super easy & will be a regular on my dinner menus.

Linguine with Fresh Tomatoes

I used penne pasta; chives instead of onion, dried basil instead of fresh. I thought it was a little dry so next time I would cut back on the cheese and use olive oil instead of butter. It was very good. I wonder how it would taste as a cold salad using a little of the starchy cooking water .. ? I might try that too!

Really good (& healthy) recipe!! I had to modify it because I didn't have the seasoned stuffing and I cooked it longer than recommended. The brush with ranch keeps it really moist.

We like spicy, so added 1t of red pepper flakes, but next time I'll reduce the brown sugar .. a little too sweet for my taste. Very good and easy for a weeknight meal.

I thought it was great! I also breaded the chicken before and didn't sprinkle the crumbs on top as directed..didn't make much sense to me to do it that way. I think next time I might quickly brown them before baking.

Garlic Chicken with Orzo Noodles

This is a great recipe as is and modifying it also. I think next time I will add the spinach before the orzo though. And the time after that, I will add some chicken stock, double the pepper flakes & garlic (we like spicy) and steam some broccoli and/or asparagus. Any veggie will do! Thank so much, it's great!

This is yummy!!! Instead of egg white, I brushed with fat free ranch and drizzled the olive oil instead of adding to the dry mix. Perfectly cooked and delicious. Thanks for posting!
