Ann's Rice Pilaf

I've been backing off box/bagged rice mixes and this is a winner! I used whole orzo to bump up the fiber and will also try with brown rice, but really good. This recipe is so versatile to add veggies & different spices. Possibilities are endless. 10 WWPP as the recipe reads but I'm sure that can be lowered a bit with the whole wheat and brown rice. Very grateful that you shared; thank you.

Fantastic Lemon Butter Fillet

I've been forced (by long term bad eating habits) to eat more fish (that isn't a fish stick). This was really, really, really good & I don't like lemony flavor. It just worked. Now I understand why fish & lemon go together, but that's another symptom of overuse of frozen food ;) I think I might use a little less butter next time--or find some way to cut down on fat, but as the recipe reads now its 6 WWPP so its pretty healthy overall. & most importantly: edible for non-foodies who gravitate towards battered fish

Oven-Fried Catfish

OMGosh this was SO good!!! I didn't have celery seed so skipped it so I'm not sure exactly what is was supposed to taste like but it was amazing as it was. I might add some cayenne to spice it up next time (tonight) mmmmm, yummy!! Thank you & 5 WWPP points that tastes like fried catfish. Beat that!! Dieters/healthy eaters miss NOTHING!

Lasagna Spinach Roll-Ups

This was fantastic!! & I did add red pepper flakes to the hot oil just to infuse some heat to the oil before I added the mushrooms & onion and used some Italian seasoning; fresh ingredients would elevate the taste. No red pepper on hand, so I did use carrot instead. Eh, could have left that out. I can see where Ricotta would make the it creamier, but I used low fat cottage cheese, fat free mozzarella and whole wheat pasta to 'healthy' it up. Rolling the noodles was tricky, but I got the hang of it by the last two so next time will go faster and probably neater ;) Following advice from another reviewer, I also made ahead and put in frig for later cooking. Very impressed - thanks for sharing!

Cod with Italian Crumb Topping

This is yummy!!! Instead of egg white, I brushed with fat free ranch and drizzled the olive oil instead of adding to the dry mix. Perfectly cooked and delicious. Thanks for posting!

Garlic Chicken with Orzo Noodles

This is a great recipe as is and modifying it also. I think next time I will add the spinach before the orzo though. And the time after that, I will add some chicken stock, double the pepper flakes & garlic (we like spicy) and steam some broccoli and/or asparagus. Any veggie will do! Thank so much, it's great!

I thought it was great! I also breaded the chicken before and didn't sprinkle the crumbs on top as directed..didn't make much sense to me to do it that way. I think next time I might quickly brown them before baking.

We like spicy, so added 1t of red pepper flakes, but next time I'll reduce the brown sugar .. a little too sweet for my taste. Very good and easy for a weeknight meal.
