Chris' Bay Area Burger

Perfection! I use fresh basil from my garden and these are to die for, exactly as the recipe is written. If using fresh basil, julienne enough leaves to make about 2 Tablespoons.

Quinoa and Black Beans

I used chicken broth and stirred in a diced fresh tomato at the end with the cilantro. Couldn't ask for better flavor and a more satisfying dish. I like just having it in the frig this week to eat for a quick lunch, as a side-dish with dinner, or as a complete meal when the family is not home. Thanks!

Homemade Green Bean Casserole

Very good. I doubled the recipe to fit my 2.5 liter casserole, used 2 16oz bags of frozen beans instead of the canned, used 1 can of cream of mushroom soup and 1 cup of sour cream instead of simply doubling the sour cream, and doubled all the other ingredients. My family SO loves cream of mushroom soup, I couldn't bear to leave it out completely. It was a hit!

Brooke's Best Bombshell Brownies

Perfect. I notice though that if I bake until toothpick comes clean it's too crusty around edges (we like soft brownies). It's possible that's due to the fact that I always sub raw sugar for white sugar, but just wanted to mention it in case it's relevant to anyone. Wonderful recipe.

Cherry Tomato Corn Salad

This was simple and delicious - made for a large company picnic last night and it was one of the first salads EMPTY on the table. I used fresh lemon basil from my garden instead of regular sweet basil, omitted the sugar because we don't do a lot of sugar in our house, and added about 1/4 cup of minced white onion. Will definitely make again - thanks for sharing!

Taco Seasoning I

FABULOUS. I doubled the recipe and used it ALL with 2 pounds of ground beef. It has just the right amount of heat without being overpowering. My seven-year-old was able to eat it and asked that I make it again. To be fair, she does enjoy spicy food - just not painfully so. This is going in my TACO TUESDAY recipe box folder for sure!!

Barbie's Tuna Salad

Fabulous! Although I like tuna salads with sweet pickle relish, my family do not. I omitted the relish and added a chopped hard boiled egg. This is a keeper - the curry and dill balance well.

Sandy's Chocolate Cake

Turned out perfect and delicious. I have two round pans and two springform pans, all the same size, and so I had to mix and match the pan type to do the three layers. I found that the springform pans performed better since the cake is so moist and lovely that even with a well-greased cake pan, a chunk broke off coming out of the pan.

Creamy Chicken and Wild Rice Soup

Delicious! And a hit with the kids too. Because I had just plain non-instant wild rice, I had to make some alterations, but stuck to the recipe except having to account for cooking longer with more liquid and making my own seasoning mix. I used the same amount of rice, but doubled the water - brought to a boil, added rice, and then covered tightly and simmered for 40 minutes - then added some sliced and diced veggies (carrots, celery, sweet red pepper, onion), brought back to a boil and simmered low for another 20 minutes before adding the roux. For the seasoning mix I used a teaspoon of ground sage, 1/2 teaspoon of savory, and heaping teaspoon of dry tarragon. Oh, and I also only had about a cup of heavy cream on hand, so I supplemented with whole milk and it was perfect - so you could probably get away with "half and half" in this recipe.

Polish Chicken and Dumplings

Ridiculously good. Polish husband raved. Omitted the "cream-of" soup both times I've made it. First time I followed suggestion to add sour cream instead, next time thickened with corn starch. Both worked well and were delicious.

Awesome. Hubby was spreading it on bread and everything he could get his hands on as soon as the batch was done. Made it yesterday to go with pulled pork soft tacos tonight. Just tasted it with the pork as it came out of the slow cooker and it's going to go well! I followed advice of others and reduced the vinegar (by half) and the white sugar significantly.

Oven Roasted Trout with Lemon Dill Stuffing

Excellent. I read all of the reviews and took notes. The only thing I will change next time is that I will not add lemon juice, as one person suggested, because it gave too much zing and took away from the balance, IMO. I tossed red potatoes and e.v. olive oil in a 9x13 baking pan and put in the pre-heated oven while prepping the rest, Then when the fish was ready for the oven, laid asparagus spears across the potatoes and set the fish on top of the asparagus. All went together well and no need to foil-line the pan.

WOW. I wish I could give 6 stars. Thanks for sharing! PS - I used diced fresh strawberries instead of blueberries because that's what I had on hand. I'm sure it'd be phenomenal with ANY fruit.
