Lighter Spaghetti Alfredo with Cauliflower

My husband, who hates cauliflower, absolutely loved this recipe. I served it over fettuccine, used 2% milk (didn't have heavy cream)plus added Asiago and Peccorino-Romano cheese. All you need is a tossed salad, garlic bread and a good Cab. This recipe makes much more than 4 servings, so for a fabulous variation, I added small broccoli florets to the leftover cauliflower "sauce", heated and served over thin pasta - becomes a different recipe for another day.

Easy Chicken Taquitos

I tried this recipe for want of something simple to make for dinner. I make it now at least twice a month and when I am expecting company, I use small tortillas and make a batch of ground beef, pulled beef and chicken taquitos. These are the best.

Golden Sweet Cornbread

This is the best "sweet" cornbread recipe by far. I make this from October through March and everyone wants the recipe. Simple and hearty. You don't need dessert.

I made this recipe for Christmas Eve and dessert on Christmas Day - family and friends took slices home for the next day's breakfast. Just fabulous and easy. You can fill it with anything you want and the taste is always different. Also, it freezes very well for two months or so.

Best Spanish Rice

Truly is the best Spanish Rice ever. I did make a mistake the second time I made it - don't double the recipe and do not stir after the ingredients have been combined. You will end up with mush.

Tomatillo Salsa Verde

I tweaked this recipe a bit because I had lots of green tomatoes left over after the harvest. I added about 6 small tomatoes to the tomatillos and two jalapeno peppers and the finished product was just as delicious as the original recipe (except a little spicier). Had a lot of salsa so I canned what we didn't use immediately.

Dessert Crepes

Unbelievably easy dessert. When you run out of ideas for company, this is it. You always have the ingredients in the home and you can fill them with anything you have handy. I lightly spread each with whipped cream cheese to which I added a few drops of orange extract and 1/4 tsp of vanilla extract. Then on top of that, I spread 1 teaspoon of Jiff's Mocha Cappuccino spread, rolled them, topped with Cool Whip and topped with grated coffee bean and chocolate. Was a major HIT with company.

Simple Garlic Shrimp

I made this recipe with shrimp and scallops in same pan. I also used dried parsley and, in addition to the caper brine, 1 TBS of capers. Served this over rice pilaf and had rave reviews from guests. Quick and easy recipe that is just unbelievably delicious. No leftovers.

Easy Beef Stroganoff

This is a great Stroganoff -no fuss no mess. Since there are just two of us at home, I used one pound of beef, 3 Tbs of flour, 1 Tbs Worcestershire sauce and 1 cup of fat free sour cream and the stroganoff still came out terrific. Since I didn't have egg noodles in my pantry, I used fusili (or rotini) and my husband actually liked them better. By the way, the left over sauce freezes very well. Thaw to room temperature then heat and serve. Great make ahead dinner.

Grilled Marinated Shrimp

Made this recipe because it sounded easy. OMG!! Not only was it easy, but the shrimp was tender and moist and company was impressed. Served over bed of rice medley and a side of steamed asparagus and salad greens. Thank you, thank you Robbie.

Primavera Noodles

What a fabulous side dish or main dish. Tried it as a side with veggies I had in fridge. I used tri-colored rotini and baby bella mushrooms then followed suggestions from another reader's reviews. The dish turned out so fantastic, our guests wanted the recipe. The only suggestion I have is that as a side, the recipe can serve 8-10 people.

Killer Artichokes

Thank you Ninakooks. I have tried other artichoke recipies and ALL tasted like either straw or bark. This recipe, not only being easy, is attractive and scrumptious. Made it for company and they were astounded by the flavor and the presenation. The grilling does the trick. If there were 10 stars, I would give them to this recipe.
