My cooking tragedies
As a mother of a child with food allergies, sometimes cooking for all of us is difficult. My worst... Trying to bake a wheat, egg, peanut-free birthday cake for my son. The egg replacer is so different from real eggs. I tried 3 cakes. All had great flavor, but were flat as pancakes!

Triple Berry Crisp
Very good dessert after a few tweaks. I added a few TBSP of flour to my fruit and sugar to help thicken the juice since several noted that they thought juice made the crust soggy. And I only used 1 c butter, since 1 1/2 seems like way too much. I will make this again, but next time will either add more fruit or cut back on the crust.

Tres Leches III
I'm giving this recipe four starts rather than three because of the popularity at our office food day. Everyone loved it. My cake came out very dense. It rose nicely, but fell when it cooled. I decreased the eggs to 8. Not sure if I over-folded my whites into the batter. This made it difficult for the milks to absorb. (I used a 15 oz can of evap milk. Have not seen a 5 oz can) BUT, the cake was very delicious. And I did use my KitchenAid with the whisk attachment. :) I'll try again maybe with this recipe, maybe with another...

Chicken and Mushroom Chowder
Very good and fairly easy. I didn't use the full amount of oregano. With the "healthy" chicken broth I used, a little salt could be added. We added peas too. I was in a hurry, so I sauteed my chicken with the garlic, onion, and mushrooms; then added the broth, etc. Worked fine. Very filling. I've put this one in my recipe box!
