Orange Pumpkin Loaf

I love this loaf! After I've done the orange in the food processor I add the other "wet" ingredients, including the sugar and usually subbing oil for butter. I mix the dry ingredients and add them right to the processor, pulsing a few times to mix them in. Then remove the blade and fold in the nuts and dried fruit. We love dates in this almost more than raisins.

Tangy (Not Sweet) Tartar Sauce

Great as is! However, for a little perk I sometimes add some capers (finely chopped, unless they are very small) and/or some minced fresh dill. Make sure you use a good quality mayonnaise, this sauce needs that smooth tasting kind of base. Some commercial brands are just too "zippy' and tangy, and they fight with the dill. Combine this with come sour cream and it makes a great vegetable dip.

Sweeper Steak

Great as written, though if you use golden mushroom soup it is even better. It's like a recipe I've used for years with all that venison the "boys" bring home. You can even slice/cube potatoes and carrots, layer them in a casserole, cover with the meat and then soup mixture. Cover then casserole tightly (or do the whole thing as a packet in heavy duty foil ) and bake for 1-2 hours. My aunt always called this "forgotten stew".

Lemon Delight

Great dessert. For those who found there wasn't much orange flavour, try draining the mandarins and replacing the liquid with an equal amount of real orange juice. I might also add a little grated orange zest next time. Other wise, a yummy and easy dessert.

Grandmother's Buttermilk Cornbread

Absolutely delicious! After reading some reviews I baked it in a greased preheated cast iron fry pan. It needed the 30 minutes, but I lowered the temperature to 325 for the last 10 minutes, as it was getting dry on the edges, but still wet in the centre. A great recipe which will certainly become a regular.

Meatball and Mushroom Stroganoff with Dill Sauce and Noodles

As I didn't have an oven bag, I used a slow cooker. I sautéed the mushrooms and onions before adding to the pot and upped the flour to three tablespoons of instant blend flour. As my local supermarket didn't have Swedish meatballs, I used low fat chicken balls and added a good grating of fresh nutmeg to the sauce. Wonderful flavour.
