Easy Vegetarian Pasta

I really liked this dish! The only change I made, based on other reviews, was instead of using chopped tomatoes, I got a can of Hunt's Diced Tomatoes with Basil and Oregano. I used red and green pepper as I didn't have any yellow peppers. Topped with feta, it was great. It took a minute to grow on me but after a few bites, I really liked it!

Quinoa Black Bean Burgers

Best Veggie burgers I've ever had. I'll make these again and again. They get nice and crispy on the outside and stay moist on the inside. Very filling and delicious!

Butterscotch Oatmeal

So good! I only add 1/4 cup of brown sugar which is plenty sweet enough for me. I put raisins, sometimes apple pieces, nuts, etc. I've even tried it with a spoonful of Nutella and THAT'S heavenly!! Best stuff ever!

Marinated Tofu

I don't think I marinated my tofu long enough, or maybe I didn't use enough liquid. I had it marinating for a full day and yet, when I cooked it, it didn't really taste like much. It wasn't as good as I had hoped it would be.

Insanely Easy Vegetarian Chili

I love this recipe!! I only put a tsp of chili powder and one can of kidney beans but I also added a half cup of Quinoa and let it cook in the liquid. I serve it with sour cream and nacho chips. Sooooo good!!

Creamy Artichoke Pasta

I made this recipe using artichoke hearts in a jar... they're pickled sort of so I guessed that's what was meant by "marinated". I found the taste to be too sour, over all. Now I'm trying to figure out how to cut out some of that tartness and I have no idea and a whole pan of this stuff. Hopefully, letting it sit overnight in the fridge will help to mellow it out.
