Vegetable Pizza I

This is a FABULOSU recipe!! I make this for every get-together, and it disappears instantly. A few minor changes that I make: I only use one brick of cream cheese instead of two. As for the ranch dressing mix, I find that Hidden Valley Ranch is the best. I omit the cauliflower and tomatoes (personal preference) and add minced green onion. I don't know if the pan used makes a difference, but I always bake the crust on a cookie sheet. This is a refreshing appetizer- thanks for sharing it, Jan!

Creamy Spinach Tortellini

This recipe was a hit for my entire family, inlcuding 3 kids under four! A great way to sneak spinach in without that "spinachy" taste. When I sauteed the onion, I used 1T butter with 1T olive oil. I also added 1 clove of garlic (minced) to the onions as they cooked for extra flavor. I did find that I needed to add considerably more than 1/2c. of milk to the sauce- more like almost 3/4 c. to keep the sauce from becoming too "pasty". Would definitely make again though!!

Pizza Popcorn

I tried this recipe becauce I was thinking of making some air-popped popcorn, but wanted something different than the normal salt-and-butter. In short, this recipe is fabulous!!! The only thing I changed was instead of using the entire 1/3 c. of butter, I cut it down to 2T, and added about 3T of olive oil. The spice blend really does mimic a pizza flavor, and the baking creates a dusty, golden flavor. Try it!! Thanks for the recipe!!!!

Penne with Garlicky Broccolini

This recipe is amazing! I susbstituted turkey bacon for the regular to decrease the fat, and I prefer the bacon crispier. I added 1T. of extra virgin olive oit to the skillet once the pasta was tossed. I didn't have broccolini, but using broccoli florets was just fine. I think fresh garlic is the taste key here- although jarred is more convenient, the fresh gives the dish the needed zing. I make this weekly now- wonderful!

Chicken a la Charlie

Delicious: some minor changes- I sauted red onion in olive oil before placing it under the chicken. I substituted cream of celery for the mushroom; and using fat free sour cream and soups tasted great w/o the fat. A little less sherry for my taste, but SO GOOD!!! A keeper!

Chickpea Falafel Burgers

I loved this recipe!! Since I'm not a fan of mushrooms, I eliminated them added 2T. flour and about 1/4c. oats to fill out the mixture. The texture was ideal for falafel, and was delicious served on whole wheat pita with sliced tomato and fat free sour cream. Will definitely make again~

Spinach Casserole

I was a little disappointed with this recipe. I normally like the combination of spinach and cottage cheese, but in this dish they didn't blend very well, which gave the spinach a bland flavor. I'd give it another shot, but would add seasoning to the mixture (garlic powder, maybe garlic salt) and double the crumb topping to enhance what's beneath.

Husband's Delight

The name is appropriate; even though my husband doesn't generally like casseroles, he enjoyed this one! I sauted the onions with the ground beef, and added a packet of sazon seasoning to the beef which added a taco-like flavor. Instead of topping it with some noodles, I kept the noodles on the bottom and added plenty of cheedar to the top.... the consistency was similar to lasagna which made it easy to slice. Will make it again!
