Red Enchilada Sauce

I needed something quick and I only had shrimp, corn tortillas, and the ingredients to this fabulous enchilada sauce. I have never made homemade sauce before, but my hubby's a chef and he said this was one of the best enchilada sauces he has ever had! I added a little more salsa, and did not have tomato paste or plain sauce, but I did have a can of pizza sauce - :) Excellent recipe!!!!

Hot Sweet Onion Dip

This recipe is so simple and it is wonderful! I used approx. 2 cups grated onion, 2 cups shredded swiss cheese and only 1 cup mayonnaise. It is excellent if served with fresh baguette slices. Always a crowd pleaser!!!

Grandma Johnson's Scones

This is the first time I have ever made scones and this recipe is fabulous! My husband is a pastry chef and he has already scarfed down a few (they came out of the oven 20 minutes ago!) I made the basic recipe with cinnamon chips and they are awesome! I think next time I will take the sugar down to 3/4 cup, though - only because of the sweet chips. I did not have any cream of tartar, so I substituted 3/4 tsp. lemon juice and they turned out great! Thanks for the great recipe!

Slow Cooker Italian Beef for Sandwiches

This recipe is delicious! We used chuck roast because it was on sale and added two beef boullion cubes to the water. We seared the roast before we put it in the crock pot. We served it with sauteed onions & green peppers on fresh hoagie rolls from the famous Mancini's Bakery in Pittsburgh. Sargento makes a Bistro flavor of Mozzarella & Asiago with roasted garlic cheese that was fabulous. The beef was great by itself and the combination of everything made for a hot, satisfying meal. A definite keeper!

Best Carrot Cake Ever

This is a great recipe! I followed the recipe word for word and it turned out moist and delicious. I took it to work and people couldn't get enough - it was gone in two hours!

Basic Ham and Bean Soup

This was a wonderful soup - excellent on cold winter evenings! I used a smoked ham shank which gave it a nice flavor. I did not have dry beans, so I added a couple cans of northern beans toward the end of cooking. Great with fresh italian bread!

Too Much Chocolate Cake

This cake is incredibly moist and truly satisfies those chocolate cravings! I only had mini chocolate chips and these worked out well - every bite had a bunch. I also lessened the oil to 1/2 cup and used 1/2 cup milk instead. Very easy to make with little clean up - makes the house smell devine! I think we just found a new family favorite!

Best Italian Sausage Soup

This soup was very tasty and my family enjoyed it. I did not have time to cook the soup all day, so instead of using the crock pot, I cooked the veggies in the pot until soft - I used a bit more beef broth because I simmered it on the stove and it cooked down fairly quickly - from start to finish in about two and one-half hours. We also used cheese tortellini instead of the spinach pasta. Very hearty and warmed the soul on a cool fall evening.

Chocolate Zucchini Bread I

Four Cheese Macaroni

Versatile recipe. I did not have muenster cheese, so I used some shredded mozzarella, but because I did not have much, I addes 1/3 of a block cream cheese. Doubled cheddar and velveeta. Rich and cheesy and extremely filling! Very good.

Strawberry/Rhubarb Crumb Pie

Incredible pie! We bought our new home and inherited a ton of rhubarb in our garden. This was my first attempt baking with rhubarb and I am very pleased. I did make two minor additions. I added just a touch of almond extract to the filling and a bit of freshly grated nutmeg to the topping. I made two pies in the early afternoon and they were set perfectly by dessert! My dad paid the best compliment - he said my great grandma would really love this pie. She was very well known for her baking skill so this recipe is definitely a keeper! Thank you so much for sharing!

Rhubarb Dumplings

Incredibly easy and good. I just made them for breakfast. I didn't have any regular biscuits, so I used the large flaky variety. Excellent! Very filling but I'm tempted to get another cup of tea and another dumpling. This could be bad for the waistline. :)

Italian Spaghetti Sauce with Meatballs

Wonderful recipe. This recipe is incredibly easy. I do precook my meatballs to save time and we like the carmelized coating on the meatballs, but otherwise I follow the recipe exactly. My husband actually prefers this now to his 100% Italian mom's sauce - quite an accomplishment, I'd say.

Apple Sausage Appetizers

This is a new family favorite! I didn't have chunky applesauce the first time I made it, but smooth works great. We used polish sausage cut in 1-inch pieces and I add a bit of garlic powder to the mix as well. We always serve it with German potato pancakes and sour cream. Oh so good!

Broiled Tilapia Parmesan

So easy, soooo good. I didn't really make any changes. For super easy cleanup, I used a sheet pan lined with parchment. Just roll it up and pitch it. A great way to quickly prepare tilapia.

Blueberry Pie

I love making pies, but this is my first attempt at blueberry. I used fresh blueberries and did not adjust the ingredients listed - I did, however, add to them. I bumped the cinnamon up a bit, added some fresh grated nutmeg and added about a tablespoon of lemon juice. I topped the pie with an egg wash and a little sanding sugar. I did protect the crust with aluminum foil which I removed for the last 10 minutes. Baked 45 minutes total and it was beautiful and set perfectly. *I made this again with fructose instead of regular sugar as my parents are borderline diabetic. They said it was the best blueberry pie they have ever eaten! This is definitely a keeper!

Butter Rich Spritz Butter Cookies

This is a delicious recipe and very easy. The dough was a bit stiff to pipe or press, so I added a bit of half & half until it was a little less firm. They baked up beautifully. I actually piped them into 4 inch bars and dipped half of each cookie in chocolate. Wonderful!
