Devouring Oatmeal Chocolate Chip Cookies

The balance of sugar and oats is just right in this recipe; however, they turned out to be just a bit too crunchy at 375 for 9 minutes. I turned the oven down to 350, baked them for 8 minutes, and they were PERFECT - very lightly toasted around the edges and soft and chewy on the inside.

Chef John's Buttermilk Biscuits

Perfection in a biscuit. Light, flaky, buttery goodness. I'm not sure if my oven is off, but I have made these twice now, and both times I have had to take them out after 12 min. instead of 15 to keep the tops from browning too much. Other than that, I followed the recipe to the letter. I'm so glad I found this gem!

Ham and Butternut Squash Spaghetti

The flavor of this was absolutely perfect! The igredients are simple and combine to make a very tasty sauce. The only critical remark I have is that mine turned out to be quite soupy. I was expecting more of a cream sauce, but it was very runny. My husband boiled the pasta and made the mistake of rinsing it, so that might have something to do with it. Either way, the sauce was quite thin even before we added it to the spaghetti. I will have to think of a way to thicken it up next time. This was still so good, I'm sure it will be a family favorite for years to come!

Key Lime Pie VII

I'm not sure if it was because I used regular limes instead of key limes, but this key lime pie was much too sweet for me! I like a fair balance between sweet and tart, and this did not do it for me. I ended up adding a lot more lime juice than the recipe called for, which made it somewhat runny as well. It still turned out to be quite good despite the strange texture; however, next time I will try using key limes instead.

Sweet Potato Casserole II

I made this as the recipe says and it turned out perfect! I ended up boiling about 6 large yams to get the 4.5 cups of mashed yams. The texture was very creamy inside and crumbly on top. This definitely beats the old marshmallow toasting.

Mexican Rice II

This was my first time making Mexican rice, so I was nervous it wouldn't turn out. I only had Basmati rice on hand and it still turned out to be delicious! It was not too greasy like some Mexican rice can be.
