Simple BBQ Ribs

I never made made ribs before from scratch and this recipe was so easy and delicious. It just wasn't specific enough so I had to read what others said and I am glad I listened to them. I boiled 2 lbs of ribs in a stockpot for 45 min then baked them as instructed. But after that I added a bit more sauce and broiled them for 5 min. I have never seen my bf "Hoover" meat so quickly.

Chocolate Mousse

This was OMG good! I used Patron Coffee flavored liquor with a little Godiva liquor because I didn't have Kahlua but it was awesome. I topped it with dark chocolate chips that i ground up in my Ninja. I served the mousse in a martini glass. I think if you put a little bit of brownie crumbles on the bottom, you could easily turn this into a spectacular trifle. This was my first time making a mousse and I am so excited that it was so easy and delish.

Lemon Cupcakes

I kept looking for the perfect lemon cupcake recipe and this one is the best! It's moist and fluffy. Some other recipes are too muffiny. I put 5 blueberries into each cupcake, cut a hole in the top and filled it with lemon curd. Soooo amazing!

Touch of Honey Biscuits

My biscuits rose nicely and I baked them for 11 min. They werre doughy. I chose this recipe because I didn't have shortening but now I think that ingredient is integral because maybe it would give the texture more flakiness. I will not be making this again. We ate the periphery and wasted the center because it was too dense.

Lemon Cupcake with Blackberry Buttercream

Cupcakes would be amazing with a different frosting. This frosting is way too sweet like everyone else said. I halved the recipe like everyone said to do and it was the perfect aount. However, it was the wrong consistency and again, too sweet. Maybe it would be better if you flavor it with fresh berries that have been strained. I tried to add butter and cut down the sugar but i just couldn't get it to be less sweet without making it too buttery. Maybe add heavy cream? The cake was good but the next day it was dense vs fluffy.
