Slow Cooker Chicken Taco Soup

Very easy, healthy, and tasty! I took the suggestion of some other reviewers and made homemade taco seasoning (recipe also found on this site) but tossed in a little extra cumin and garlic powder, as well as some cayenne pepper since we like spicy food. Inadvertently forgot to buy chili beans so didn't use those, but tasted fine without. This does remind me a little more of a chili consistency than a soup, so I might add extra broth next time. I didn't have to remove the chicken to shred - was able to just shred with a mixing spoon in the pot.

Boilermaker Tailgate Chili

Really great chili recipe. I made the following (minor) modifications -- 1) substituted 1 pound ground pork for one of the 2 pounds of ground chuck, and used 1/2 pound andouille sausage and 1/2 pound chorizo in lieu of the italian sausage 2) used 4 cubes of "Not beef" bouillon rather than beef bouillon (can find these at Whole Foods) since I'm not a fan of the various unnatural ingredients found in typical beef bouillon), 3) added a tablespoon of cocoa as some other reviewers suggested for flavor depth, 4) used 3 cans of beans instead of 4 and 5) fried up black forest bacon (also found at Whole Foods) instead of bacon bits. I made this a day ahead, simmered on the crock pot for a couple hours, and then the next day re-warmed in the crock and simmered for a couple hours before eating. Will definitely make it again!

Baked Tilapia in Garlic and Olive Oil

Very tasty yet simple way to cook tilapia. Yum! I've also sprinkled a bit of parmesean cheese before baking, which is also very good.

Gorgonzola and Apple Pork Chops

I thought this was delicious as did my boyfriend. Clearly if you do not like gorgonzola cheese, you probably won't like this, but if you do, you'll LOVE it!! I've made the sauce as a topping for pork tenderloin as well, and it is absolutely wonderful.

Chicken Supreme IV

Absolutely delicious! I made it exactly according to the recipe and loved it. I stored the leftover chicken with the angel hair pasta, and the flavor of the wine sauce nicely marinated the pasta for another great meal the next day.
