French Toast Casserole

This is a keeper. I followed directions, using butter instead of margarine (because I just like it better) and for the topping, I kept the sugar and cinnamon in their respective measurements, but added 1/4 tsp each of ground cardamom, ground nutmeg, and ground ginger. Otherwise, I followed the original recipe. It did take 60 min to bake, plus cooling down time. Definitely something to get started on early in the morning.

Party Lemonade

I've made this recipe a couple of times now and it's always turned out very well. Most recently, instead of using 12 lemons I used 6 lemons and 6 limes for lemon-limeade, and it is fabulous! I also used 2 cups of sugar instead of 3 and it is still sweet enough.

Vietnamese Fresh Spring Rolls

This was great! I'm so excited to know how to make these myself! I did add cucumber strips, shredded carrots, and bean sprouts. I didn't have basil or lettuce handy, but these made a decent small meal for my husband and me. Will probably taste even better with the Thai basil next time.

Homemade Chicken Soup

Good chicken soup! I did not use the optional bouillon granules, and it came out needing salt, so I added some after straining the broth and it was good. Made it for my husband when he was sick with the flu and he loved it! Will definitely make again.

Mulligatawny Soup I

Wow! So delish! I did double the recipe, and based on other reviews, I substituted 1/2 coconut oil and 1/2 olive oil in place of butter. I also used a full 14 oz. can of coconut milk in place of the heavy cream. I added 3 small spoonfuls of minced garlic, the heads from a bunch of asparagus, and a 6 oz. package of mushrooms to the initial saute. In place of an apple I used a whole large Asian pear (because I had one around), which I grated, and I added 16 dried red chilies, which cooked from the very beginning until the rice and pear were added (the soup had become spiced to my liking - I omitted black pepper). For the rice, I added in pre-cooked jasmine rice (2 c.), because I've had very bad luck with cooking raw rice into soups before.

Sarah's Applesauce

So yummy and so easy! I never thought to try making applesauce, but I was left with about 8# of apples that were going. I almost doubled the recipe. It's a bit sweet for my taste (I prefer sour) but not much sweeter than conventional applesauce. I cooked on the stove and then transferred into the blender to puree. I'm lazy, LOL. Next time, I will probably cut a little of the sugar OR use granny smith instead of red delicious. For those of you who want a smooth applesauce, don't transfer it all to the blender at once because there will likely be chunks left in. Transfer in smaller batches.
