Spinach Stuffed Chicken Breasts

The only complaints I get are the bacon doesn't get crispy (duh!) and the filling squishes out. LOL!

This recipe was only ok. I probably would have given it 4 stars, but my husband would probably have only given it 2. We did not have cream cheese with chives, so we used regular cream cheese and cut up some chives in it for the stuffing. We then sauteed more chives with mushrooms and melted in the rest of the cream cheese for the sauce and served with angel hair pasta. There definitely was not enough sauce for the pasta (not necessarily the recipe's fault, we just expected more). We both thought the mushrooms made the dish and it would have been way too much cream cheese without them. The chicken did come out very nice and moist and tender though.

Cajun Ponchartrain Sauce

My husband and I both thought this had a really good flavor. I did add onions and saute with the mushrooms and used fat free half and half instead of cream. I expected this sauce to be thicker, and even doubled as some reviewers suggested, but was a little disappointed in it's thinness. We served with seared tuna steaks and herb pasta. Hubby is requesting again with more shrimp and serving over pasta.

Cheddar Baked Chicken

I sent this recipe to my husband on a whim and he made it for dinner that very night. We served with Parmesan angel hair pasta and both thought it was great. The chicken came out moist and tender and the combination of bread crumbs, cereal, and cheese was just right. Definitely a keeper that will become a regular in our rotation.

Land of Nod Cinnamon Buns

These were so good and so easy!! We put them together Christmas Eve night and breakfast was ready before everyone got up Christmas morning. The only downside was the cinnamon seemed to be hit and miss - although we also left them in the pan rather than turning them out to help them stay warm. Still a wonderful, and wonderfully easy treat!

Mouth-Watering Stuffed Mushrooms

I thought these were a little too cream cheesey, even though I'm generally a cream cheese fan. I served them with Christmas dinner though and everyone else, especially my husband who's not a huge mushroom fan, raved over them. Very quick and easy, although I did have way too much filling left over. May use only half a brick of cream cheese next time.

Apple Dip

I saw a similar recipe elsewhere - but it called for 1 teaspoon added cinnamon. I added the cinnamon to this recipe and served with apple slices and graham crackers at a work social. Received rave reviews!

Lemon Lu Lu Cake

I tweeked this recipe a little when I made it based on others' reviews. My husband and I are both loving it! For the cake, I added the lemon pudding, but instead of making the cake with oil, I used 1/2 cup unsweetened applesauce. The low fat directions on most cake mixes will tell you 1/3 cup applesauce, but those little individual servings are 1/2 cup and oh-so-easy to keep on hand and just dump in! For the glaze, I only made 2/3 the recipe and left the butter out entirely. So I just used 2 cups powdered sugar and 1 cup lemon juice. This cake does have a definite lemon twang, but why else would you eat lemon cake?! It's super moist and super easy to make.
