Crispy Herb Baked Chicken

This was fantastic, full of flavor and tender. I took some suggestions from other reviewers and cut the butter in half. I didn't have any mustard so I mixed dry mustard with sour cream and sprinkled a bit of cayenne on top the mixture. I also increased the amount of curry to a tablespoon and only used a pinch of salt. The added sour cream gave the sauce a nice smooth texture which helped it stick to the chicken. I'll definitely make this again :)

Chunky Monkey Pancakes

I changed these up a bit based on the ingredients I had in the house. Instead of chocolate chips, I used creamed cinnamon honey for the added sweetness, and I omitted the pecans and vanilla. Turned out delicious, and no syrup was needed. I will definitely make again, and eventually try out the recipe with chocolate chips!

Jalapeno Ranch Salad Dressing

Great! I made a few adjustments to the recipe, and it came out delicious! I kept the amount of tomatillos and cilantro the same, but I used 2 fresh jalapenos instead of pickled jalapenos, and I only used 8 oz of sour cream (fat free) and 1 packet of ranch like another review had suggested. Definitely spicy!!

Ropa Vieja in a Slow Cooker

Delicious! After reading some of the reviews...I only used half of the can of tomato paste and added a quarter cup more of the red wine vinegar. I also added a chopped up jalapeno. I only used a pinch of salt and pepper and the flavors from the peppers and onions after slow cooking for 8 hours were perfection! I served it on top of a tostada shell with chopped lettuce, shredded cheese and sour cream. My party guests loved it!

Annie's Fruit Salsa and Cinnamon Chips

I tested this recipe on my boyfriend before I served it at a dinner party...he loved it! I omitted the strawberries and used pineapple preserves. I also used a mini food processor and added the apple chunks last and it gave the fruit salsa a great texture. Delicious and healthy snack!!
